- Place cinnamon, cloves and allspice on a double thickness of cheesecloth; bring up corners of cloth and tie with a string to form a bag. , Place cider and brown sugar in a 3-qt. slow cooker; stir until sugar dissolves. Add spice bag. Place orange slices on top. Cover and cook on low for 2-3 hours or until heated through. Discard spice bag.

With just four ingredients - okay, five if you spike it with your favorite rum - this Crock Pot hot spiced apple cider couldn't be any easier to make. It's the perfect excuse to get out there and rake the leaves.

- Pour apple cider into a 2.5-quart or larger Crock Pot or other slow cooker. Add cinnamon sticks.
- With a toothpick, poke holes all around the orange, about 1/2 inch to 1 inch apart. Carefully poke the cloves into the toothpick holes in the orange.
- Place orange into the cider in the slow cooker.
- Cook on low until hot and spiced through, about 4 hours. Ladle into mugs along with an ounce or so of rum if using. Place a cinnamon stick in each glass if desired and serve.

SLOW COOKER HARD CIDER
The perfect make-ahead cocktail for a cold day, with the added bonus of making your house smell amazing. Add the alcohol at the very end to preserve its potency.

- Pour the apple cider into a slow cooker. Tie the ginger, cinnamon sticks, cloves, allspice and black peppercorns into a cheesecloth to make a sachet. Add the sachet, brown sugar and orange slices to the slow cooker. Set the slow cooker on high for 1 hour then reduce to low and continue cooking for another 4 hours. Add the gin just before serving. Serve in mugs.
CROCK POT APPLE CIDER AND HARD CIDER

- 1. Wash apples to remove any dirt/chemicals etc. Cut apples into 4 parts (original recipe said that you can keep seeds in it and others say to remove, you can decide which you prefer). Put into crock pot. Add spices and cover apples with water, do not have to be completely submerged as apples will cook down. Mix everything around to blend ingredients. Cook for 8-10 hours on low for stronger flavor, stirring it occasionally. Or you can cook it on high for 4-5 hours stirring it every hour. Mash with potato masher. Strain out cider. Now this is where you have options. I have heard everything from straining it through a cotton pillowcase, straining it through a colander a couple times, or even a mesh strainer. One author said they liked the bits of apple in their cider another said they wanted it all removed. So strain to your preference. Bottle.
- 2. Now as for the spices in the ingredient list I have found cider recipes cooked with honey, oranges and lemons so you can add those too if you wish. I plan to add some citrus honey to mine. As for the Hard Cider you can add rum if you like, or you can put it in a demijohn with some beer yeast and let ferment for about a month for one batch and two weeks for another for a weaker alcohol content.
HOT SPICED APPLE CIDER IN A CROCK POT
I recently made this for a holiday party, and it was a big hit. I kept the crock pot on low throughout the evening, so the flavors continued to infuse. The house smelled great, too. I hope you enjoy it!

- Pour enough cider to fill crock pot to ¾ full. Add brown sugar. Stick whole cloves into skin of orange and apple wedges. Place apple, orange and all remaining ingredients into cheese cloth, tie with string and drop into crock pot. Bring to a boil, about 2 to 2 ½ hours on high.
- Once the cider is boiling, reduce setting to low. Keep on low for 2 hours or more before serving. Replenish with additional cider when needed; if cider is cold, return setting to high until heated.
- Serve or have guests serve themselves from the crock pot. If desired, leave a bottle of spiced rum nearby.

SLOW COOKER APPLE CIDER BRAISED PORK
This pork shoulder recipe combines pork shoulder with apple cider in a slow cooker, where it is cooked for several hours until tender. Reduce the cooking liquid to create a thick and flavorful sauce you can pour over the sliced pork.

- Season pork with salt and black pepper. Heat oil in a large skillet over high heat. Sear pork on all sides in the hot oil until browned, about 3 minutes per side. Transfer pork to the slow cooker.
- Reduce stovetop temperature to medium; cook and stir shallots and celery in the skillet until they begin to soften, 3 to 4 minutes. Pour in apple cider vinegar and cook, scraping up any browned bits, until liquid is nearly evaporated, 4 to 5 minutes.
- Pour shallot mixture over pork shoulder in the slow cooker. Add apple cider, garlic cloves, and bay leaf. Cover, set slow cooker to Low, and cook until fork-tender but not falling apart, about 6 hours. Turn pork over every 1 to 2 hours. Remove pork roast to a plate and cover loosely with foil.
- Pour remaining liquid from the slow cooker through a fine mesh strainer into a large saucepan; place over high heat. Discard bay leaf and other solids. Bring sauce mixture to a boil, decrease heat and cook, skimming fat from the top, until reduced to 1/4 of the original volume, about 10 minutes.
- Remove sauce from heat and stir in Dijon mustard and cayenne pepper. Slowly whisk in cold butter until incorporated. Sprinkle in fresh herbs and season with salt and black pepper to taste.
- Cut pork into 1/4-thick slices and serve with sauce poured over the top.
