CUCUMBER AND OLIVE APPETIZERS
I got this recipe from one of my cooking classes in college. It's the "old fashioned" type of appetizer, but one that makes a beautiful display on the plate and I never take any home with me because they disappear quickly.

Steps:
- Using the tines of a fork, score the unpeeled cucumber lengthwise on all sides. Slice the cucumber into 1/4-inch thick rounds.
- In a small bowl, combine the cream cheese and blue cheese dressing. Spread the cheese mixture on the rye bread slices. Top with a slice of cucumber and a slice of olive.

TITA'S CUCUMBERS WITH OLIVE OIL
This is a super-simple but delicious snack that my grandmother (Tita) would give me either by itself or along with a heaping plate of arroz con habichuelas (rice with beans).

Steps:
- Peel and slice cucumber into 1/4-inch slices/rounds. (Tita used to cut the seeded centers out of the cucumber slices for me. This is not necessary, but I think it's better. You can also buy a seedless cucumber.).
- Arrange cucumber slices on a large plate.
- Lightly pour or sprinkle olive oil over rounds.
- Sprinkle with salt.

Steps:
- Put the cucumber slices in a colander, sprinkle with a little salt and leave to drain for 30 minutes.
- Rinse the cucumbers, drain, pat dry and put in a salad bowl.
- Sprinkle with dill, drizzle with lemon juice and oil.
- Add the olives, season with salt if necessary and toss.
- Leave to stand for a few minutes, then serve.
