Curried Cheese and Olive Toasts image

Steps:

  • In a small bowl, combine cheese, olives, and onions; set aside.
  • Mix mayonnaise and curry powder.
  • Fold in cheese mixture.
  • Spread on untoasted sides of bread slices.
  • Broil until bubbly.

1 cup grated extra-sharp cheddar cheese
1 (4 1/2 ounce) can sliced ripe olives, drained
3 green onions, finely chopped
1/2 cup mayonnaise
3/4 teaspoon curry powder
15 slices of long narrow French bread (one or half inch thick, lightly toasted on one side)

CURRIED OLIVES

This is an old recipe from my first husband's mother. She never told me where she found it but the family liked these olives and others she made, too. I haven't made this recipe in a long time so don't have a picture. I will probably make a batch of these for Easter and will post a picture then.

Steps:

  • 1. Combine onion, lemon juice, and curry powder. With mixer or blender mix in oil. Put olives in a jar and pour oil over all. Cover and refrigerate for at least 3 days for the olives to develop full flavor. Serve as an appetizer or part of an antipasto plate.

1 Tbsp finely chopped onion
2 Tbsp lemon juice
1 Tbsp curry powder, use mild sweet or hot as you prefer
1/2 c olive oil
1 1/2 c drained pimento stuffed green olives

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium-size mixing bowl, combine olives, green onions, Cheddar cheese, curry powder, mayonnaise, and salt. Mix well.
  • Spread mixture on English muffins. Cut the English muffins into fourths. Note: If you want to freeze these, now is the time! Arrange the muffin pieces on a cookie sheet.
  • Bake at 400 degrees F (200 degrees C) for 10 minutes.

Easy Curried Eggs on Toast image

Steps:

  • In a saucepan, over low-medium heat, melt/combine unsalted butter and olive oil; then whisk in whole wheat pastry flour.
  • Slowly add nonfat milk, whisking constantly to avoid lumps--and continue to cook and whisk until sauce is smooth and thickened.
  • Stir in chopped hard-boiled eggs, curry powder, salt, and freshly ground black pepper, and cook until thoroughly warmed; then remove from heat and cover.
  • Toast whole wheat bread, top with curried egg mixture, and serve.

1 tablespoon unsalted butter
1 tablespoon olive oil
1/8 cup whole wheat pastry flour
1 cup nonfat milk
4 hard-boiled eggs, peeled and chopped

Basil Feta Olive Toast image

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Mix together the crumbled feta cheese and chopped kalamata olives. Set aside.
  • Place bread slices on a baking sheet. Brush virgin olive oil on top of each slice of bread. Cover each slice of bread with whole basil leaves flattened. Cover basil leaves with feta cheese and olive mixture.
  • Bake for about 15 minutes or until toasted to your liking.
