Steps:
- In a large bowl, combine the flour, 1/2 cup brown sugar and baking powder. Cut in butter until crumbly. Gradually add milk, dates and walnuts. , In a large saucepan, combine water and remaining brown sugar; bring to a boil. Remove from the heat; add the date mixture and mix well. , Transfer to a greased 10-in. cast-iron skillet or 8-in. square baking pan. Bake at 350° for 25-30 minutes or until top is golden brown and fruit is tender. Serve warm, with whipped cream and cinnamon if desired.

Anyone who likes dates will enjoy this rich date dessert. The recipe, which came out of my mother's cookbook, is our favorite dessert for Thanksgiving, Christmas...even New Year's gatherings.

- In a bowl, cream 1/2 cup brown sugar and 1 tablespoon butter. Sift together flour, baking powder, salt and cinnamon; add dates and nuts. Add flour mixture alternately with milk to creamed mixture; set aside. , In a saucepan, combine water with remaining brown sugar and butter. Bring to a boil; boil 5 minutes. Pour into a 9-in. round baking pan. Spoon batter on top of sauce. Bake at 350° for 45 minutes. Serve warm or cold with whipped cream or ice cream.

OLD FASHIONED DATE PUDDING
My mother-in-law always whipped up this old-fashioned dessert at Thanksgiving and Christmas. My husband and I enjoy the chewy dates and sweet thick syrup drizzled on top. It's impossible to resist a second helping.

- Mix together 1 cup dates, 1 cup hot water and baking soda. Let stand several minutes.
- Add remaining ingredients (white sugar, butter, egg, flour, baking powder and pecans). Mix well.
- Pour into 9x9 inch greased pan.
- Bake at 400 degrees for 30 minutes.
- Mix brown sugar, 2/3 cup water and 2/3 cup dates in saucepan.
- Cook for 3 minutes over medium heat,stirring constantly.
- Pour on top of date pudding immediately, or it can be spooned on after it is cut into pieces.
- Top with whipped cream.

- Heat oven to 180C/fan 160C/gas 4. Lightly grease a deep 2-litre (about 28 x 20cm) oval baking dish. Tip the dates into a pan, pour over the milk and bring up to scalding point. Remove from the heat, add the vanilla essence and bicarbonate of soda, then leave to one side. Sift the flour and ginger into a bowl, then add the sugar, butter and eggs. Beat with an electric whisk for about 5 mins. Fold in the date mixture and stem ginger, then pour into the baking dish.
- For the sauce, sprinkle the sugar over the pudding batter, then drizzle with the syrup. Pour 250ml boiling water over (do not stir), then bake for 40-45 mins until the pudding is firm to the touch. Serve spoonfuls of the pudding with a generous helping of syrupy sauce from the bottom of the dish. Great with vanilla ice cream or pouring cream.
