TURKEY SHEPHERD'S PIE

Steps:
- Boil potatoes until tender, 15 to 20 minutes. While potatoes are cooking, gather other ingredients.
- Mash potatoes with butter and milk. Season with salt and pepper to taste. Set aside.
- Preheat oven to 375 degrees F (190 degrees C).
- Heat olive oil in a skillet over medium heat; stir in onion. Saute onion until it has softened and turned translucent, about 5 minutes. Stir in ground turkey, carrot, mushrooms, parsley, thyme, garlic, and chicken bouillon. Cook and stir until meat is broken up and cooked through. Add salt and pepper to taste. Stir in flour and cook for 1 minute more.
- Transfer meat mixture to a deep dish pie pan or casserole dish. Spread mashed potatoes over meat, and swirl with a fork.
- Bake in preheated oven until tops of mashed potatoes are lightly browned, about 30 minutes.

- Preheat the oven to 400 degrees F.
- Heat the vegetable oil in a large cast-iron skillet over medium-high heat until very hot. Add the onions and cook until just starting to soften, about 4 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the ground turkey and then sprinkle in the salt, paprika and garlic powder. Cook, breaking up clumps of the turkey with a wooden spoon, until brown, about 6 minutes. Add the gravy, corn, lima beans, parsley, Worcestershire sauce and hot sauce. Reduce the heat to a simmer; simmer for about 3 minutes.
- While the filling simmers, stir together the potatoes, cheese and eggs in a large bowl, making sure it is thoroughly mixed. Layer the potatoes on top of the filling in the skillet. Bake the shepherd's pie until bubbling and golden brown, 30 to 45 minutes.

- In a greased 2-qt. baking dish, layer the turkey, gravy, carrots, stuffing and corn. Top with potatoes. Bake, uncovered, at 325° for 45-50 minutes or until edges of potatoes are browned.

Steps:
- Preheat oven to 350 degrees. In a 9- to 10-inch pie plate, mound stuffing on bottom; layer with cranberry sauce, turkey, and carrots. Drizzle with gravy; spread potatoes over surface to sides of dish. Top with more cranberry sauce, if desired.
- Place pie on a baking sheet, and bake until heated through and potatoes are golden, 35 to 40 minutes. Let cool slightly.
DAY AFTER TURKEY DAY SHEHERD'S PIE
I made this up with my mountain of Thanksgiving leftovers. It was GREAT! Really pretty if you pipe the mashed potatoes onto the top with a pastry bag, or a large ziploc bag with the corner snipped off. Use any variation you like!

Steps:
- Preheat oven to 350 degrees.
- In a large skillet saute onion, celery,& carrots in the olive oil.
- Keep on medium heat until carrots are almost 1/2 cooked.
- Add a bit of water and steam if needed.
- Add turkey and Gravy and mix well then stir in salt, pepper, and Maggi seasoning.
- Leave on the heat until warmed through.
- In pie plate with crust, place stuffing in bottom and smush into an even layer with a cup or jar.
- Pour gravy mixture on top of the stuffing.
- Pipe mashed potatoes on top of the gravy mixture.
- I do "kisses" with lots of peaks all over.
- After 30 minutes, sprinkle top with parmesan cheese.
- Cook for 30 more minutes or until carrots are done (poke a fork in the cracks between the potato kisses).

- In a large skillet over medium heat, melt butter. Add onion, celery and carrots, cooking until onions are translucent. Add minced garlic, cooking for an additional minute. Add turkey, corn and peas (or green beans), along with seasonings and gravy, cooking until heated through. Transfer to a 1 quart baking dish, pressing into an even layer.
- Heat mashed potatoes until luke warm and easy to stir. Add half of the shredded cheese to the potatoes, stir to combine. Spread mashed potatoes over the turkey filling. Sprinkle with remaining cheese.
