CREAM CORN LIKE NO OTHER

This is NOTHING like canned creamed corn! My husband is not a fan of corn or creamed dishes, but he thinks this is great. Easy and quick to prepare and is an especially delicious side dish for chicken or pork. Everyone always asks for the recipe.

Cream Corn Like No Other image

Steps:

  • In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

2 (10 ounce) packages frozen corn kernels, thawed
1 cup heavy cream
1 teaspoon salt
2 tablespoons granulated sugar
¼ teaspoon freshly ground black pepper
2 tablespoons butter
1 cup whole milk
2 tablespoons all-purpose flour
¼ cup freshly grated Parmesan cheese

DEHYDRATOR CREAMED CORN

To rehydrate and cook dried corn: In a saucepan, combine 1/4 cup dried corn with 1 cup hot water. If the corn has been blanched, it will rehydrate in 5 to 10 minutes, unblanched corn will take about 30 minutes or longer. Bring the rehydrated corn to a boil and cook for 3 to 5 minutes, cover and let sit for 5 minutes. Drain. This will yield 3/4 cup cooked corn. This recipe adapted from "Mary Bell's Complete Dehydrator Cookbook". Prep time does NOT include dehydrator drying time.

Steps:

  • In a saucepan, melt the butter over low heat. Sprinkle in the flour and stir with a wire whisk until blended. Slowly add the milk and sugar, stirring constantly.
  • Add the cooked corn, celery powder, and pepper, and remove the pan from the heat. Top with more celery powder or a dusting or Parmesan cheese.
  • Tip: Rehydrate small pieces of dried green bell pepper with the corn and cook them together.

Hot Buttered Fried Creamed Corn image

Steps:

  • Cut the kernels off the ears. Heat a large skillet over medium-high heat, add the bacon, and fry till crisp. Drain on paper towels and crumble.
  • In the drippings in the pan, sauté the corn kernels until lightly browned. Add the butter and heat until melted.
  • Stir in the flour until smooth and gradually stir in the evaporated milk.
  • Stir in the crumbled bacon and cover and cook and cook until the sauce is thickened, about 10 minutes.

6 ears corn
3 slices bacon
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup evaporated milk, warmed
salt and pepper, to taste

CREAMED CORN

Everybody likes this corn. To partially thaw the corn, put it in a colander and run under lukewarm water about 30 sec or so. The added sugar is a personal preference. We like sweet corn at our house. This makes a lot, but leftovers freeze well. A nonstick skillet is probably best because corn can tend to stick when unattended. Enjoy!

  • Puree 1 pkg partially thawed corn in food processor or blender; process until smooth.
  • Melt butter in large skillet over medium heat.
  • Stir in pureed corn, remaining 2 pkg corn, milk, salt, pepper, and sugar.
  • Bring to boil, stirring constantly.
  • Reduce heat and simmer, stirring often about 25-30 min or until desired consistency.
