- In a large bowl, toss apples and walnuts with wine. Mix sugar and cinnamon; sprinkle over apple mixture and toss to combine., Refrigerate, covered, 1 hour before serving. If desired, serve with matzo crackers.

CHAROSET
A simple recipe for this traditional Passover staple. I always make a great deal extra to munch on for days! Mixture will turn the appropriate shade of brown to look like the mortar which it represents. You can substitute sugar for the honey, if desired.

APPLE AND WALNUT HAROSETH
This very classic Ashkenazi haroseth, which is a ceremonial part of the Passover Seder, is made from diced apple, toasted walnuts, a touch of cinnamon and a shower of sweet Passover wine. It's meant to represent the mortar used by the Israelites when they were slaves in Egypt. The sweeter the apples you use, the less honey you'll need to add at the end. But tart apples are nice here, too, as long as you balance their acidity. If you can't get Manischewitz or another sweet Passover wine, ruby port is a fine substitute. You can make this haroseth one day ahead and store it in the refrigerator; just mix it well before serving to reincorporate any liquid that might have seeped out of the mix.

- Heat oven to 325 degrees. Spread walnuts on a rimmed baking sheet and toast in the oven, stirring once or twice, until fragrant and golden-brown at the edges, about 10 minutes. Transfer baking sheet to a wire rack to cool.
- Finely chop the nuts and place in a large bowl. Add remaining ingredients and toss to coat. Let sit for at least 30 minutes before serving. Taste and add more honey and cinnamon, if you'd like.

CHAROSETS (GRANDPA'S RECIPE)
This is a recipe for charosets, a traditional food on the Passover Seder Plate. Who knows how this recipe came to be--my grandfather's family was from Russia, but the ingredients have a distinctly Sephardic tone. Many who swear they hate charosets love this recipe, and it also helps counteract certain properties of matzah ;) I hope you enjoy it as much as we do--it is a great family activity to make it, as the chopping part takes forever. We always make a double recipe because everyone wants enough to take home to eat during the holiday week. I'm totally guessing on the prep time. We make an evening of it.

Steps:
- Chop apples coarsely in a large bowl (we have always used a double bladed chopper and a wooden bowl).
- Use a food processor to chop the other fruits and nuts (obviously this was done by hand originally, but the processor makes it soooooo much easier).
- Add all the ingredients to the apples and chop very well to blend.

- Place the chopped dates and golden raisins in a small saucepan with the wine. Cook over low heat, stirring occasionally, until the fruit thickens to a soft paste. Cool.
- Stir nuts and cinnamon into the cooled fruit mixture.

A modernised traditional Moroccan recipe -from Australian Womens Weekly Moroccan cookbook. I thought these looked interesting and easily made gluten-free by ensuring gluten-free chocolate is used. You can leave out the chocolate all-together if you wish. Recipe uses Australian measures- 1 tablespoon = 4 teaspoons. Time stated does not include overnight refrigeration required

- Blend or process the dates, raisins, coarsely chopped nuts and wine/juice until the mixture forms a smooth paste.
- Using wet hands, roll level teaspoons of mixture into balls. Place them on a lined tray. Cover and refrigerate overnight.
- Dip half of the balls into melted chocolate, place on foil lined tray, leave to set at room temperature.
- Roll remaining balls in finely chopped walnuts.
