DEVIL'S FOOD CHEERIO CHEWIES

These are great for potlucks and bake sales! The cake mix and butter make a brownie-like crust. I would recommend lightly spraying the edges of the pan, to make it a little easier to remove after the marshmallows back to the edge. The butter will take care of the bottom!

Steps:

  • Melt butter in oven at 350 degrees in 10 x 15 inch pan. Watch so it doesn't brown/bubble! Make sure entire bottom of the pan is coated with the butter.
  • Sprinkle cake mix over melted butter. Press down.
  • Top with marshmallows, then chocolate chips, and then Cheerios.
  • Drizzle sweetened condensed milk over the top of the last layer.
  • Bake at 350 degrees for 20-25 minutes.
  • Cut edges while warm. Refrigerate until firm and cut into bars. 24 bars makes for pretty large bars. Cutting into 48 is very difficult because of the cheerios.

1 (14 ounce) can sweetened condensed milk

DEVIL'S FOOD CAKE WITH VANILLA BAKED CHERRIES

Devil's Food Cake with Vanilla Baked Cherries image

Steps:

  • For the cake: Preheat the oven to 340 degrees F. Spray the inside of a medium (32-ounce) reusable oven-safe silicone container with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder and salt. Add the coffee, oil and buttermilk and mix until well combined. Add the egg and vanilla and whisk until the batter is smooth, 2 minutes or so. Pour the batter into the prepared container and place it standing up on a baking sheet with the seal open. Bake until a toothpick can be inserted into the center of the cake and removed cleanly, about 50 minutes. Let cool completely, about 1 hour.
  • For the vanilla baked cherries: Combine the cherries, sugar and vanilla in a small (16-ounce) reusable oven-safe silicone container. In a small bowl, combine the lemon juice and cornstarch; pour over the cherries in the container. Zip the container, leaving the seal open 1 inch to vent. Place the container standing up on a baking sheet and bake until the cherries are simmering in liquid, about 30 minutes.
  • Open the container carefully. Stir the cherries and allow to cool completely, about 1 hour.
  • For serving: Invert the medium container and gently press to remove the cake then cut it into 4 slices. Top with the vanilla baked cherries and ice cream or whipped cream.

1/2 cup hot coffee
1/2 cup canola oil

CHEERWINE DEVIL'S FOOD CAKE

Another recipe from 'Taste of the South' that I am posting for safe-keeping. There is a frosting recipe included that I will post with this cake recipe as well. The picture of this cake looks really good, I am anxious to bake it! I believe that Cheerwine is a cherry-cola soft drink, 'Zaar wouldn't recognize the name so I used cherry-cola in its place.

Steps:

  • .Preheat oven to 350*. Grease and flour a 13x9 pan. Mix cake mix, eggs, oil substituting the Cheerwine for the water. Add the almond extract. Pour into the prepared pan and bake as directed on the package. approximately 35-40 minutes.Frost immediately upon removal from the oven.
  • Frosting:
  • Prepare while the cake is baking.
  • In a small saucepan combine the Cheerwine, margarine and cocoa powder. Bring to a boil. Pour the hot mixture over the powdered sugar stirring until smooth. Add the almond extract and chopped nuts, stirring to combine.
  • Cool for approximately 20 minutes or until lukewarm. Pour over the hot cake.

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter and chocolate together and set aside to cool for about 5 minutes.
  • Stir chocolate mixture, granulated sugar, egg, vanilla and salt together until blended.
  • Stir in flour and nuts.
  • Shape into 1 inch balls and place 2 inches apart on ungreased cookie sheets.
  • Bake for 8 to 10 minutes or until set.
  • While still warm, roll in confectioner's sugar.
