BROILED BLUEFISH WITH TOMATO, OLIVE, AND CAPER COMPOTE

Broiled Bluefish with Tomato, Olive, and Caper Compote image

Steps:

  • Make the compote. Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, jalapeno, and celery, season with pepper, and cook, stirring, until soft and fragrant, about 4 minutes. Add the tomatoes, olives, and capers and cook, stirring, until hot, about 2 minutes more.
  • Remove from the heat and stir in the lemon juice and parsley. Set aside covered with foil to keep warm.
  • Place a rack 5 inches from the broiler element and preheat.
  • Prepare the fish. Using a sharp knife, slash the bluefish skin to form cross-hatch marks. Transfer the fillets to a foil-lined baking sheet and brush all over with the oil. Season with salt and generously with pepper. Broil the fish skin-side down, until just cooked through, about 5 minutes. (If the skin comes loose during cooking, you may remove and discard it.)
  • Using a metal spatula, transfer the fillets to 4 warmed plates and top with the compote. Serve immediately.

3 tablespoons extra-virgin olive oil
1 small yellow onion, finely chopped
7 cloves garlic, minced
1/2 to 1 jalapeno, seeded and finely chopped
1/4 cup finely chopped celery (with leaves)
1 pound vine ripened plum or round tomatoes, halved, seeds squeezed out, and diced
1/2 cup kalamata olives, pitted and roughly chopped
2 tablespoons capers
Freshly ground black pepper
2 tablespoons freshly squeezed lemon juice
2 tablespoons chopped flat-leaf parsley leaves
Four 8-ounce center-cut bluefish fillets, skin-on
2 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper

Saffron-and-Orange-Scented Seafood Stew image

Steps:

  • In a saucepan, heat 1 tablespoon oil over medium-high. When it shimmers, add tomato paste and shrimp shells. Cook, stirring, until shells turn pink and opaque, about 2 minutes. Add 2 cups water and gently boil 5 minutes. Strain shrimp broth into a heatproof bowl; discard solids. Stir saffron into broth.
  • Heat remaining 2 tablespoons oil in a braiser pan or wide, shallow pot over medium. Add celery, shallots, and garlic; season with salt and pepper. Cook, stirring occasionally, until fragrant, 1 to 2 minutes. Stir in tomatoes and thyme. Cover and cook until tomatoes collapse and release their juices, 6 to 8 minutes. Add wine and boil until mostly evaporated.
  • Add clams to pan, increase heat to medium-high, and cook, covered, just until they begin to open, 6 to 8 minutes (discard any that don't open). Transfer clams to a large heatproof bowl and cover with a plate to keep warm. Add mussels to pan and cook, covered, just until they begin to open, about 5 minutes (discard any that don't open). Transfer mussels to bowl with clams.
  • Add seafood stock, shrimp broth, and orange zest and juice to pan. Bring to a simmer over medium-high heat; simmer 5 minutes. Meanwhile, remove about half of clams and two-thirds of mussels from their shells, reserving meat and juices and discarding empty shells.
  • Stir shrimp and fish into pan, reduce heat to medium-low, and cook, covered, just until shrimp and fish are firm and cooked through, 3 to 5 minutes. Return shelled and in-shell clams and mussels and any accumulated juices to pan, stirring to combine. Remove from heat, sprinkle with celery leaves and parsley, drizzle with more oil, and serve with bread, if desired.

2/3 cup dry white wine, such as Sauvignon Blanc
2 1/2 pounds littleneck clams (about 24), purged and drained
2 pounds mussels (about 48), purged and drained
1 can (14.5 ounces) seafood or fish stock, such as Bar Harbor
2 teaspoons grated orange zest, plus 3 tablespoons fresh juice
1 1/2 pounds firm, skinless white-fish fillet, such as halibut, cut into 1-inch pieces
Chopped fresh parsley leaves, for serving
Toasted Garlic-Butter-and-Herb Bread, for serving (optional)

SAGE AND GARLIC SCENTED BLUEFISH.

Sage is an unsuspected partner for fish. It needs a strong partner, and bluefish is ideal. Although full-flavored by it's self bluefish tastes almost like meat when marinated with fresh sage, lemon, garlic and olive oil. This dish needs about 1 to 2 hours to refrigerate after assembly. So make ahead of time. This recipe is from the Splendid Table

Sage and Garlic Scented Bluefish. image

Steps:

  • use about 1/2 tablespoon of olive oil to coat a large shallow baking dish.
  • Spread the pieces of fish in a single layer in the dish, spacing them about 1/2 inch apart.
  • Top the fish pieces with the slivers of garlic and the fresh sage (again make sure you only use fresh sage).
  • Drizzle lightly with olive oil.
  • Sprinkle with lemon juice, and season with salt and pepper. lightly cover the dish with plastic wrap and refrigerate for 1 to 2 hours.
  • Preheat the oven to 450*F.
  • Slip the gratin dish into the oven and bake 7-10 minutes or until the bluefish is firm when pressed. Baste the fish with the pan juices after about 3 minutes.
  • Do not overcook, fish that flakes easily when it's done is over cooked.Serve the fish directly from the baking dish.
  • Spoon the pan juices over the fish and pass lemon wedges around as the final seasoning.

Super Summer Grilled Bluefish image

Steps:

  • Place the fish fillets into a large bowl. Pour in the orange juice, lime juice, lemon juice, olive oil and white wine. Season with salt, pepper and seafood rub. Stir to blend and coat fish. Leave the squeezed lemon and lime halves in the bowl too. Marinate for at least 30 minutes.
  • Preheat a grill for high heat. When the grill is hot, oil the grate.
  • Place fish fillets on the grill, and discard the marinade. Cook for 4 minutes on each side, or until fish flakes with a fork. Transfer to a serving platter, and remove the dark blue part of the fish before serving.
