WILD BLACKBERRY OR DEWBERRY PIE

Picking wild blackberries or dewberries is something we did every year for as long as I can remember. We usually make lots of jelly out of the berries, but we also made sure we have our fill of fresh berry pie while the season lasts. The recipe is for the filling only. I do not usually add any spices because we enjoy the full flavor of the berry. However, you can add a bit of cinnamon if you prefer. You can use your favorite pie crust recipe or use my pie crust recipe, which is tender and flaky & never fails me. Recipe #218593

Wild Blackberry or Dewberry Pie image

Steps:

  • Heat oven to 425 degrees.
  • Prepare pastry.
  • In a large mixing bowl, add the blackberries and sugar & cinnamon; toss to coat. Next add the cornstarch & lightly mix. Place filling into pastry lined pie pan. Sprinkle lemon juice over filling & dot with butter.
  • Cover the filling with the top pie crust. Trim the excess crust off around the pie and seal. Cut slits in top of pie crust. Bake 50-60 minutes or until crust is golden brown & juice begins to bubble through the slits in crust. Cool completely before slicing.

DEWBERRY PIE

This is a very easy and delicious berry pie. Since dewberries are related to the blackberry, feel free to substitute. Dewberries are plentiful "where I come from" and this is an old family recipe.

Steps:

  • Preheat oven to 450 degrees F.
  • Line 9" pie pan with half the pastry.
  • Combine berries, sugar, flour and lemon juice (being careful not to mash berries).
  • Spoon berry mixture into pie shell, and dot with butter.
  • Cover with top crust and slash in several places to allow steam to escape. (I usually brush top crust with a slightly beaten egg white).
  • Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and continue baking for 30 to 40 minutes, or until browned.

  • 1. STIR ALL OF THE ABOVE INGREDIENTS TOGETHER. BEFORE ADDING EGG, SLIGHTLY BEAT IT
  • 2. in a Pie pan, or a square pan, put pie crust on bottom and sides. Next pour berry mixture into pie crust
  • 3. Next, place two thin pie crusts over top. Next Cut slits in top pie crusts. Next, sprinkle mixture of cinnamon, sugar on top. Place in 350 degree oven until golden brown. ENJOY

4 C dew berries,(black berries, or other berries)
1 1/2 C sugar
8 oz. sour cream
3 Tbs. all purpose flour
2 Tbs. butter, room temperature
1 egg
pinch salt
1 teaspoon almond extract

Steps:

  • In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar and melted butter until well blended . Press mixture into the bottom of a 9x13 inch pan. Chill in freezer while you make the filling.
  • In a large bowl, beat the cream cheese with 1/4 cup sugar and 2 tablespoons milk until smooth. Fold in 1/2 of the whipped topping.. Spread filling over crust. Place the strawberries in an even layer over filling. Prepare instant pudding as directed on package, but using only 3 1/2 cups milk. Spread prepared pudding over strawberries. Chill 4 hours or overnight.
  • Before serving, spread remaining whipped topping over pudding.

Deep Dish Strawberry Pie image

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Press pie crust pastry into a 1/2-inch deep dish pie plate. Prick bottom and sides of pastry with fork.
  • Bake in the preheated oven until lightly brown, 10 to 12 minutes. Cool completely on a wire rack.
  • Melt chocolate chips in a saucepan over medium-low heat, stirring constantly, 1 to 3 minutes. Paint melted chocolate in the bottom and inside of cooled pie crust. Place chocolate-painted crust in freezer to harden the chocolate, about 30 minutes.
  • Place the prettiest strawberry, cut-side down, in the center of the chocolate crust. Arrange as many attractive strawberries as possible around the center strawberry, so they appear as circles around the center.
  • Mash the remaining strawberries in a bowl; transfer to a saucepan. Add sugar and lemon juice; bring to a boil, stirring frequently.
  • Whisk ginger ale and cornstarch together in a bowl until smooth; gradually stir into boiling strawberry mixture. Reduce heat to medium-low and simmer, stirring constantly, until thickened, 12 to 14 minutes. Remove from heat and cool for about 5 minutes.
  • Spoon strawberry sauce over strawberries in pie shell. Chill in refrigerator until pie is set, at least 8 hours.

Self Crusting Blackberry/Dewberry Cobbler image

Steps:

  • 1. In a saucepan, heat berries, water, sugar and butter. Add flour to thicken. Simmer on low heat, until desired thickness. Do not scorch.
  • 2. In a large mixing bowl, sift together flour and baking powder. Add sugar and milk. Mix well and pour into 9x13 baking dish that has 2 tablespoons butter or margarine melted in it.
  • 3. Pour berry filling gently over the entire surface, DO NOT STIR.
  • 4. Bake at 350 degrees for about half an hour, until crust on top is golden brown.

BERRY FILLING
1 qt ripe berries
1 c water
1 c sugar
2 Tbsp butter or margarine
2 Tbsp flour (to thicken)
SELF CRUSTING COBBLER
1 c flour
2 tsp baking powder
3/4 c sugar
3/4 c milk

EASY BERRY PIE WITH FROZEN BERRIES

Using frozen berries means you can make this easy pie year-round. Precooking the filling means you get perfect consistency (no more runny pies) and the cook time on the crust is perfect! I prefer to spell things in the top crust like "I love you."

Easy Berry Pie with Frozen Berries image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 9-inch pie plate with 1 of the pie crusts.
  • Combine berries, sugar, cornstarch, liqueur, and lemon juice in a large saucepan over medium heat. Stir occasionally as berries thaw and the mixture thickens, 10 to 15 minutes. Remove from heat when it reaches the consistency of a runny jam or a sundae fruit topping.
