SPINACH DIP WITH GARLIC, YOGURT AND DILL
Lemony, garlic-laden and full of chopped herbs and Greek yogurt, this ultra-creamy spinach dip is a fresher, tangier take on the retro kind made with dehydrated soup mix. It's best to take the cream cheese out of the fridge at least an hour ahead so it can soften; otherwise you can heat it in the microwave for a few seconds to soften it up. Firm, cold cream cheese won't mix into the dip as easily. Serve this with any combination of cut-up vegetables, crackers, toast and sturdy chips.

Steps:
- If using fresh spinach, put it in a colander in the sink. Bring a kettle of water to a boil and pour it over the spinach to wilt it. Let the spinach cool completely, then use your hands to squeeze it very dry. Coarsely chop spinach and set it aside. If using frozen chopped spinach, just squeeze it out until it's very dry, then set aside.
- In a blender or food processor, combine scallions, yogurt, cream cheese, dill, parsley, garlic, 2 teaspoons lemon juice, zest, cumin, 3/4 teaspoon salt and 1/4 teaspoon pepper. With the motor running, drizzle in olive oil and blend, scraping down the sides as needed, until the mixture is very smooth, 1 to 2 minutes.
- Scrape the mixture into a mixing bowl and fold in the chopped spinach until evenly distributed. Cover and refrigerate for at least 30 minutes to allow the flavors to blend. Dip will keep in the refrigerator for up to 4 days.
- Just before serving, taste and add more salt, pepper and lemon juice, if you like. To serve, scrape dip into a serving bowl, drizzle with olive oil, and sprinkle with Urfa or Aleppo pepper flakes, if desired.
CREAMY CHEESY SPINACH DIP
This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

DILLY CHEESE PINWHEELS
At 4:00 p.m. my friend and co-host announces that the guest list for our New Years party has jumped by 10 or 15 people. Not wanting to make another trip to the store, I begin a little pantry expedition to see if I could up with another appetizer to fill in. Found some crescent rolls but didn't want to do a Mexican or Southwestern flavored pinwheel so I came up with this instead.

Steps:
- Place cream cheese in a mixer or food processor and cream until smooth. Add dill and Edam cheese to mix and blend.
- Open first canister crescent dough and piece together the dough into 2 rectangles pairing the our four triangles together in one sheet and the inner for triangles together in another. Its okay to stretch the dough out a little bit.
- Spread a thin layer of of the cream cheese on the dough.
- Begin rolling the dough using the long side as the center of the pinwheel. Contine rolling into tube. Wrap tubes with wax paper twisting edges of paper. Repeat with the second roll of crescent dough.
- Place both tubes into the freezer for 20 minutes.
- Preheat oven to 375 degrees.
- Remove dough from wax paper and begin slicing into 3/8 inch pieces. Place the pieces on cookie sheet. Bake 12-13 minutes.
- Allow the pinwheels to cool 5-10 minutes before removing from the cookie sheet. If you remove too soon, they will not retain their shape as the cheese will be too hot and soft.
- Serve either hot or cold.
- (Note cooking time includes freezing time.).
