DOUBLE PEANUT BARS
These sweet no-bake snacks are great energy bars. Any dried fruit works well, but I prefer cranberries. Grain cereals, plus honey, peanuts and peanut butter make the bars popular at my house. -Kim Rocker of LaGrange, Georgia

- In a bowl, combine the cereals, peanuts and mixed fruit. In a small saucepan, combine the brown sugar, honey and peanut butter. Cook and stir until brown sugar and peanut butter are melted and mixture is smooth. Pour over cereal mixture; gently stir to coat evenly., Transfer to an 8-in. square dish coated with cooking spray; gently press down. Cool and cut into bars. Store in the refrigerator.

- Preheat oven to 400°. In an ungreased 15x10x1-in. baking pan, combine oats, peanuts, wheat germ and sunflower kernels. Bake, stirring occasionally, until toasted, 8-12 minutes. Cool in pan on a wire rack., In a small saucepan, combine honey, brown sugar and butter. Cook and stir over medium heat until mixture comes to a boil; cook 2 minutes longer. Remove from heat; stir in peanut butter and Nutella until blended., Transfer oat mixture to a large bowl; add honey mixture and toss to coat. Press into a greased 13x9-in. pan. Cool. Cut into bars.

Homemade granola bars are an easy and healthy after-school snack and aren't as sweet as the store-bought varieties. They can be stored in an air-tight container to have handy when hunger strikes. More great recipes can be found at www.peanutbureau.ca.

- Preheat oven to 325°F (160°C). Grease an 8x8-inch (20x20-cm) baking pan and line with parchment paper, letting it stick and hang over the pan. In a large bowl, stir oats with peanuts, raisins, flax seed, cinnamon and salt.
- Place honey, peanut butter, brown sugar and butter in a medium saucepan set over medium-high heat. Stir constantly until sugar is dissolved and mixture boils around edges, about 1 minute. Pour over oatmeal mixture and stir well to combine.
- Using damp fingers, press firmly into pan. Bake in preheated oven until edges are a deep golden brown, about 25 to 30 minutes.
- Cool completely in pan. Using the parchment paper, remove to a cutting board then discard parchment. Slice into bars and store in an airtight container.

Steps:
- Melt peanut butter and honey together in a saucepan over medium heat. Dissolve brown sugar into the peanut butter mixture; bring to a simmer for 2 minutes.
- Mix granola, oats, rice cereal, chocolate chips, and fruit together in a large bowl; pour peanut butter mixture over the granola mixture and fold to coat.
- Grease a cake pan. Pour the granola mixture into the prepared pan and press into a flat layer. Cool at room temperature until set, about 15 minutes before cutting into bars.

- Stir the peanut butter, honey and coconut oil together in a medium saucepan. Cook over medium heat, stirring occasionally, until the mixture reaches a simmer. Continue to simmer for 1 minute, stirring often so that the bottom of the mixture does not burn. Remove from the heat.
- Add the vanilla and salt, and stir until combined. Add in the oats and almonds, and stir until completely combined. (Optional step: If you would like the chocolate chips not to melt, I recommend chilling transferring the granola to the refrigerator at this point for about 15 minutes, or until it reaches room temperature.) Then stir in the chocolate chips until combined.
- Press the granola firmly and evenly into the bottom of the prepared pan. (I use the bottom of a measuring cup to help press it down so that it’s nice and flat.) Sprinkle a few extra chocolate chips on top if you would like. Then cover and refrigerate the granola bars for about an hour or so, or until they are chilled.

- Preheat oven to 350 degrees F (176 C) and line an 8x8-inch baking dish with parchment paper.
- Add oats, almonds, and sunflower seeds to large baking sheet. If sunflower seeds or almonds are already roasted, don’t put them on the pan and reserve to add later.
