EASY DATE SQUARES

My MIL's easy, no fail date squares...Make an extra batch of the date jam its good on its own...over bagels or toast. If your date jam is a little thick. Add a little extra water to thin it out, until it is the consistency that you like. Becareful not to make it too thin.

Easy Date Squares image

Steps:

  • Preheat oven to 350 degrees.
  • Date Jam
  • Combine dates, sugar, water and vanilla in saucepan and bring to a boil.
  • Simmer 5 minutes, until mixture resembles a thick paste.
  • Cool completely
  • Oatmeal Layer
  • Combine flour, oats, sugar, nuts and salt in mixing bowl.
  • Cut in butter.
  • Reserve 2 cups of this mixture for topping.
  • Press remaining mixture into bottom of greased 9 x 9" pan.
  • Spread cooled date jam over the bottom layer and sprinkle reserved oatmeal mixture evenly over top.
  • Bake 25- 33 minute.
  • Cool completely then cut into squares.

1/2 cup walnuts (optional) or 1/2 cup pecans, chopped (optional)
1/4 teaspoon salt
3/4 cup butter
1 1/2 cups dates, pitted and chopped

Gramma's Date Squares image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
  • Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

Steps:

  • In a 4 cup(1L) glass bowl, combine dates and orange juice.
  • Cover and microwave at high for 5-6 minutes, stirring once.
  • Stir vigorously, breaking up dates to form a homogeneous filling.
  • Set aside.
  • In separate bowl, cream butter and brown sugar, stir in flour, add rolled oats, mixing until crumbly.
  • Press about 2/3 of mixture in bottom of 8" or 9" square glass baking dish.
  • Microwave on high for 2-3 minutes, or until firm.
  • Spread date filling over base.
  • Top with remaining crumb mixture, pat down lightly.
  • Microwave on high 5-6 minutes or until firm.
  • Rotate dish partway through cooking.
  • Let stand directly on counter top 10 minutes.
  • Cool completely, cut into squares.

  • Conventional cooking.
  • For date filling, increase orange juice to 1 cup.
  • Cook dates and orange juice in a covered saucepan, stirring occasionally, over medium-low heat 8-10 minutes.
  • Prepare crumb mixture and assemble squares as directed.
  • Bake at 350° oven 25-30 minutes or until light golden.

Candied Coconut Date Squares image

Steps:

  • Grease a 9x5x3" loaf pan with butter, and set aside, until ready to use.
  • For the squares - In a medium sized pot, combine, dates, sugar, flour, butter and egg.
  • Stir constantly until mixture comes to a full boil 7 -10 minutes.
  • Continue cooking until it starts to thicken, this should take about 3 minutes.
  • Add the coconut to the mixture and then spread into prepared 9x5x3" loaf pan.
  • Prepare the glaze in a small bowl, stirring together the powdered sugar, milk, lemon juice and vanilla extract, until smooth.
  • Drizzle the glaze over the warm squares.
  • Cover and refrigerate until firm, this should take about 3 hours.
  • Cut into squares, and store covered in the fridge until needed -- Enjoy.

Here's a recipe from our family recipe box. It came from my husband's grandmother. The squares have a cakey bottom and the dates on the top soften up during baking to make a very nice treat! If you find the cake isn't cooked after about 1/2 hour, you can cover the pan with tinfoil to stop the top from burning and bake for another 5-10 minutes.

Steps:

  • Preheat oven to 350.
  • Crumb Layer.
  • Combine first 5 ingredients in a large bowl. Cut in butter until mixture turns to a course crumb. Press slightly more than 1/2 of this mixture into the bottom of a 9x9 pan. Set aside rest of crumbs.
  • Date mixture.
  • Combine dates and water in a medium pot. Bring to a boil on medium heat. Reduce to medium low heat and simmer uncovered for 10 minutes. Dates will become soft and form a thick filling. Let cool for a few minutes then spread on bottom layer of crumbs.
  • Sprinkle top layer over the filling to completely cover. Slightly press down on top crumbs. Bake at 350 degrees for 30 minutes or until top is golden brown. Let stand on wire rack till cool. Slice into squares.

  • Combine all ingredients and simmer until thickened (don't burn) Set aside and cool.
  • Base:.
  • Lightly grease a 9x9-inch pan.
  • Sift and mix together flour and soda.
