Very rich. When an apple pie is cooked in thick custard, expect the apples to stay a little on the firm side. They won't get as soft as they do in an apple pie made without a custard.

Pennsylvania Dutch Sour Cream-Apple Pie image

Steps:

  • Place the prepared pie pastry shell in the freezer for 15 minutes; preheat oven to 400°.
  • In a big bowl, whisk the sour cream, sugar, egg, flour, salt, and vanilla until well blended.
  • Add in the apples; mix well.
  • Turn the filling into the chilled pie shell; smooth the top with your hands, laying the apple slices down flat.
  • Place the pie on the center oven rack; bake for 15 minutes; decrease heat to 350°; bake for 30 minutes.
  • Meanwhile, make the topping: in a big bowl, combine the flour, sugars, cinnamon, salt, and walnuts; add in the butter and stir with a fork, then switch to your hands rubbing the mixture gently between your fingers until it forms uniform crumbs; refrigerate until ready to use.
  • Remove pie from oven and carefully dump the streusel topping in the center, spreading it evenly over the surface with your hands.
  • Tamp the topping down lightly.
  • Return pie to oven, placing it so that the part that faced the back of the oven now faces the front.
  • Slide a foil-line baking sheet onto the rack below to catch any spills.
  • Continue baking for about 20 minutes or until golden brown.
  • Transfer pie to wire rack to cool for at least 2 hours before serving;
  • You may serve this pie chilled, so after it is thoroughly cooled, cover with loosely tented foil and refrigerate at least 2 hours.

Pour into the prepared pie shell, over the apples. With a spatula, submerge any apples that float to the top. 6. Bake 20 to 25 minutes, until the edge of the filling is slightly puffed and the center is dry to the touch. 7. While the pie bakes, prepare the walnut streusel: Combine the flour, walnuts, granulated sugar, cinnamon, and salt in a medium bowl. Pour in the melted butter and mix with your fingers until the mixture resembles coarse meal. 8.   • 1. Prepare crust: Sift flour, sugar, salt, and cinnamon into a bowl. Cut in the butter and shortening with a fork until the mixture resembles coarse meal. Moisten with just enough apple juice, tossing ingredients lightly with a fork. Form dough into a ball. Wrap and refrigerate for 2 hours.
  • 2. Cut off 1/3 of the dough and return it to the refrigerator. Roll out the other 2/3 between 2 sheets of wax paper. Line a greased 9-inch pie pan with the dough. Trim overhang and crimp decoratively. Preheat oven to 350°F.
  • 3. Whisk all filling ingredients, except apples, in a bowl. Add apples, then spoon into the pastry-lined pie pan. Combine topping ingredients and sprinkle over filling.

Steps:

  • Make the pie dough: Combine flour, salt, and granulated sugar in a food processor, and pulse to blend. Add butter, pulsing until pea-size clumps form. With machine running, add water, 1 tablespoon at a time, until mixture just comes together. Shape dough into a disk. Wrap in plastic wrap, and refrigerate until firm, about 45 minutes.
  • Roll out dough into a 15-inch round (1/4 inch thick) on a lightly floured surface. Fit into a 10-inch pie plate. Trim edge, leaving a 1/2-inch overhang, and fold under, pressing onto rim of pie plate. Use your fingers to create a scalloped edge if desired. Refrigerate until firm, about 1 hour.
  • Make the crumb topping: Whisk together sugars, flour, cinnamon, and salt. Add butter, and combine with a fork or pastry cutter. Stir in walnuts, and press filling into large clumps with your hands; refrigerate until ready to use.
  • Preheat oven to 450 degrees with 2 racks in lower third.
  • Make the filling: Whisk together granulated sugar, flour, cinnamon, and salt in a large bowl. Stir in sour cream, eggs, and vanilla until thoroughly combined. Add apples, tossing to coat. Place apple mixture in crust.
  • Place an empty rimmed baking sheet on lowest oven rack to catch any drips, then bake pie 10 minutes. Reduce oven temperature to 350 degrees, and bake until apples are golden brown in places, juices are bubbling, and crust is golden brown, about 45 minutes.
  • Remove topping from refrigerator, and crumble over hot filling. Bake until topping is browned and set, apples are tender, and bottom crust is thoroughly baked, about 50 minutes. Let cool completely on a wire rack, 3 to 4 hours.

  • Preheat the oven to 425 degrees F (220 degrees C). Press the pie crust into and up the sides of a 9 inch pie plate.

I found this recipe when I was looking for an alternative to double crusted apple pie but a little fancier than the Dutch version. This actually calls for peaches instead of apples, but having none on hand and "baker's itch" I substituted apples,added the cinnamon,and it turned out so well that I have yet to try it with peaches.
