BBQ BAKED BEANS
BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

Steps:
- Preheat the oven to 350 degrees F.
- Heat an oven-proof heavy-bottom pot or Dutch oven over medium heat. Add the bacon and cook, stirring often, until the fat has started to render and the bacon is beginning to crisp, about 5 minutes. Add the onions and bell pepper and continue to cook, stirring often, until the vegetables are slightly softened, about 3 minutes.
- Stir in the canned beans, barbecue sauce, molasses, vinegar, Worcestershire, brown sugar, mustard powder, cayenne, 1 teaspoon salt and several grinds of black pepper. Bring to a simmer and let cook over low heat, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
- Transfer the pot to the oven and bake (uncovered) until the sauce thickens and the beans on top begin to brown, about 40 minutes. Remove from the oven and let cool for at least 15 minutes before serving warm or at room temperature.

- Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
- Preheat oven to 300 degrees F (150 degrees C).
- Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
- Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
- Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.

THE ONCE AND FUTURE BEANS
Steps:
- Heat oven to 250 degrees F.
- Soak beans in a plastic container overnight in just enough cold water to submerge them completely.
- Place a cast iron Dutch oven over medium heat and stir in the bacon, onion, and jalapenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes. Stir in the tomato paste, dark brown sugar, and molasses.
- Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups of liquid. Add the liquid to the Dutch oven and bring to a boil over high heat. Add in cayenne, black pepper and salt. Give them a stir and cover with the lid. Place the Dutch oven in the oven for 6 to 8 hours, or until the beans are tender.

- Preheat oven to 350°. In an ovenproof Dutch oven, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Cook and stir onion, yellow pepper, red pepper, garlic, chipotle pepper and pepper in bacon drippings until vegetables are tender. Steps:
- Cook bacon until not quite done; drain and set aside. (Bacon should not be brittle.)
- Saute onions in 2 or 3 tablespoons bacon fat.
- Take 1 can of beans and rinse and drain well; use other can as is.
- Pour the unstrained can into large frying pan. Add brown sugar; stir until sugar is melted. Add onions and rest of the beans.
- Chop bacon; add to mixture, along with catsup, spices and salt.
- Simmer for 15 to 20 minutes.

BOURBON AND DP BAKED BEANS
I came up with this recipe after having made some bourbon baked beans and seeing a recipe for cola baked beans and I thought: Why not combine the two?

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix brown sugar, paprika, mustard, and cayenne pepper together in a bowl. Whisk in pepper soda, ketchup, and Worcestershire sauce until brown sugar is dissolved.
- Cut 4 slices of bacon into small strips. Cook and stir in a large Dutch oven over medium heat until almost crispy, 3 to 5 minutes. Transfer to a bowl, reserving bacon grease.
- Stir onion into the bacon grease in the Dutch oven; cook and stir until soft, 3 to 5 minutes. Add garlic; cook and stir for 1 minute. Pour in bourbon, stirring to scrape up browned bits off the bottom with a wooden spoon. Stir bacon strips back in.
- Pour brown sugar mixture and baked beans into the Dutch oven. Simmer until beans are heated through, about 15 minutes. Arrange remaining 4 slices of bacon on top of the beans.
- Bake in the preheated oven, covered, until beans are bubbly and sauce is syrupy, about 3 hours.

DUTCH BAKED BEANS
This was my grandmothers recipe that she only shared with her granddaughters. We had to literally stand by her and measure all the ingredients as she just went by her eye for ingredients. Its more of a sweet and sour baked bean, not as heavy as some baked bean recipes. I hope you enjoy it. Goes great with baked ham.

Steps:
- Soak beans overnight or at least 8 hours. Drain beans, put in dutch oven and cover with clean hot water. When beans start to cook, scum off and add salt. Cook slow til almost done. Put in casserole dish.
- Add: Sugar.
- Mustard.
- Vinegar.
- Bacon grease.
- Stir until sugar and grease dissolve. Sprinkle with pepper, Add strips of bacon on top and Bake at 350 for about 1 hour or until bacon is brown.

- Place dried beans into a shallow pan and sort through them, picking out any broken beans, stones, or other debris. Pour sorted beans into a colander and rinse under cold running water.
- Place rinsed beans into a large bowl and cover with 2-3 inches of cold water. Cover bowl and allow beans to soak overnight.
- After an overnight soak, drain beans and add them along with 6 cups of water to a Dutch oven or other large, oven-safe pot. Bring to a boil. Reduce to a simmer and simmer beans for 30 minutes, or until beans are just barely tender. Drain beans through a colander set over a large bowl to reserve cooking liquid. Set drained beans and cooking liquid aside.
- To the same pot, add onions and bacon. Cook over medium heat until onions are soft and bacon is lightly crisp. Return the beans to the pot with the onions and bacon along with the remaining ingredients. Stir in 3 cups of reserved cooking liquid (if you don’t have 3 cups of cooking liquid, add enough water to make up the difference.).
