INSTANT POT ALPHABET VEGETABLE SOUP
This soup is really simple to make. I use it as a side dish for sandwiches often times as we don't eat nearly as many French Fries or Potato Chips these days as we did in our younger years, lol! To make this a main dish, add leftover cooked meat to the pot or a half cup dry beans of choice.

Steps:
- 1. Add the chicken or vegetable broth, tomato paste, vegetable soup packet, and all vegetables to Instant pot and cook on high pressure for 3 minutes.
- 2. Seal lid, make sure valve is set to sealing
- 3. Use quick release valve to release steam.
- 4. Remove lid. Salt & Pepper Soup to taste.
- 5. Ladle into soup bowls and sprinkle with Fresh parsley and a Tbsp Parmesan or Asiago cheese
EASY ALPHABET VEGETABLE SOUP
In my never ending quest to find the clone for Campbells Vegetarian-Alphabet soup, I can honestly say....this is not it! To make this vegetarian-use vegetable bouillon instead of beef/chicken. The serving size is just a guess, makes alot! If desired add cooked ground beef.

- In a large stockpot (8 quart) place all ingredients(except pasta).
- Bring to a boil.
- Reduce heat and simmer for 1 hours Taste occasionally adding additional seasonings if desired.

- Place the meat in a large stock pot, and cook over medium-high heat until evenly brown. Drain the meat, except for about 2 tablespoons of the juices.
- Dissolve the bouillon cubes in 3 cups of hot water, and add to the stock pot with the meat. Stir in spicy vegetable juice cocktail, mixed vegetables, alphabet pasta, and 6 cups of water. Simmer 20 minutes, or until pasta is tender. Season to taste with salt and pepper, and serve.

- Heat the oil in a stockpot over medium heat. Add the onions, garlic, celery, carrots, parsnip, turnip, potato, and tomatoes. Season with the savory, salt, and pepper. Cook, stirring occasionally, until the vegetables begin to soften and brown slightly, about 30 minutes. Add the bay leaves, sherry, and stock, then bring the mixture to a boil. Reduce heat to simmer, and cook the mixture, partially covered, until vegetables are tender, about 45 minutes.
- Meanwhile, fill a medium saucepan with water. Add salt. Cook the noodles in the saucepan, just until they are al dente, about 4 minutes. Strain the noodles well under cool running water. Shake out any excess water.
- About 10 minutes before serving, add zucchini, cabbage, and green beans to the stock. Stir the spinach into the pot, add the noodles, and cook until spinach is wilted. Serve hot.
QUICK AND EASY ALPHABET SOUP
I got this recipe in an email- I haven't tried it yet, but the idea of using a can of Spaghettios in it sounded interesting! The recipe says you can either use the spaghettios, alphabet soup, or just alphabet pasta- I'm pretty sure that each one will make three very different tasting versions of soup, so I guess I'll have to try it three times to see which one works best!

- Heat oil in a saucepan over medium high heat.
- Add celery, onion and carrots, and saute until mixture is crisp tender.
- Add chicken and beef broths and bring to a boil.
- Stir in corn and peas and simmer for 1 or 2 minutes.
- Add can of spaghettios, or alphabet soup or pasta, and cook until soup is hot, stirring frequently.
- Serve with grilled ciabata bread or a grilled open face cheese sandwich, and enjoy!

- Heat the olive oil over medium heat in a 5 quart (or larger) pot or dutch oven. Add the garlic, onion, Italian seasoning, salt, thyme, and pepper. Stir and cook for 5 minutes as the onion softens.
- Add broth, vegetables, potato, bay leaf, tomato paste, and diced tomatoes. Bring to a boil, then add uncooked pasta. Cover and simmer for 30 minutes. Remove bay leaf.
- Cover and store leftovers in the refrigerator for up to a week. To reheat, simply pour into a pot over medium heat and cook until warm. Feel free to add more broth to the leftovers as it cooks if it is too thick. (It thickens in the refrigerator as the potatoes and noodles soak up the liquid.)
