CREAMY GARLIC ASPARAGUS BAKE

Creamy Garlic Asparagus Bake image

Steps:

  • Heat oven to 400°F.
  • To blanch asparagus, heat 4 quarts water (add 1 tablespoon salt, if desired) in 6-quart Dutch oven to boiling. Add asparagus; cook 3 to 4 minutes or until asparagus is crisp-tender. Remove asparagus, and immediately immerse in bowl of ice cold water. Let stand 5 minutes. Drain well; pat dry with paper towels.
  • Place asparagus spears in ungreased 13x9-inch (3-quart) baking dish.
  • In medium bowl, mix Boursin™ cheese and whipping cream with whisk or fork until blended. Stir in Parmesan cheese; spread over asparagus. Top with tomatoes.
  • Bake 15 to 20 minutes or until heated through. Sprinkle with thyme.

2 lb fresh asparagus spears, trimmed (about 35 spears per lb)
2 packages (5.2 oz each) Boursin® cheese with garlic and herbs, softened
1 cup heavy whipping cream
3/4 cup shredded fresh Parmesan cheese
2 medium plum (Roma) tomatoes, seeded and chopped
1 teaspoon fresh thyme leaves

Steps:

  • 1. Line a baking sheet with some tinfoil. Place the asparagus on the baking sheet and drizzle with the melted butter.
  • 2. Sprinkle the house seasoning and Parmesan cheese over the top.
  • 3. Place in a 400 degree oven for 15 minutes.
  • 4. Remove and top with the mozzarella cheese and a little sprinkling of Italian seasoning over the top.
  • 5. Return to the oven for an additional 5-7 minutes to melt the cheese and let it begin to brown.

1 bunch asparagus, woody ends trimmed
3 Tbsp butter, melted
1 Tbsp grated Parmesan cheese
3/4 c shredded mozzarella cheese
Italian seasoning
1/2 tsp house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)

Steps:

  • Preheat oven to 350 degrees. Cook asparagus in large skillet of simmering water 2 to 3 minutes, or until bright green , but still crisp;drain.
  • Toss asparagus with dressing in 1-1/2 to 2 quart baking dish.
  • Sprinkle with cheese and cracker crumbs.
  • Bake for 10 to 15 minutes or until cheese is lightly browned and mixture is heated through.

1 lb asparagus spear, trimmed
1/4 cup ranch dressing

1/2 cup coarsely crushed gluten-free cracker (about 12)
