MICROWAVE PEANUT BRITTLE
This is a wonderful recipe but you should only make it once a year, because you can't stop eating it.

Steps:
- Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
- Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.

Steps:
- Line a jelly roll pan with parchment paper.
- Melt butter in a saucepan over medium heat. Stir sugar and salt with melted butter to dissolve completely. Remove saucepan from heat, add peanuts, and stir to coat completely; immediately pour onto prepared pan and spread into an even layer.
- Refrigerate until brittle, at least 30 minutes. Separate from parchment and break into pieces.

- Generously butter a cookie sheet. In a 2-quart (8 cup) glass mixing bowl, using a spoon, stir together granulated sugar and corn syrup. Microwave mixture on HIGH power 4 minutes.
- Mix in butter and vanilla extract, stirring until butter is melted. Microwave on HIGH power 1 1/2 minutes.Cook times may vary slightly depending on microwave wattage. Watch for a golden brown color near the end.
- Stir in baking soda (mixture will become fluffy and foamy). Pour and and lightly spread out onto prepared baking sheet. Don’t over spread and move quickly
