A wonderful way to use those raspberries growing in the yard.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Mix together the raspberries, sugar, tapioca, lemon juice, cinnamon, and salt until raspberries are well-covered.
- Pour into 9 or 10-inch pastry shell. Dot with butter; add top crust and crimp edge.
- Make slits in the top crust and brush with cream. Bake in the preheated oven for 15 minutes to set the crust. Reduce heat to 375 degrees F (190 degrees C) and bake until crust is golden and filling is bubbly, about 25 minutes more. Allow pie to cool completely before serving.

SUNNY'S EASY RASPBERRY BROOKIE PIE
Steps:
- For the filling: Combine the raspberries, lemon zest, lemon juice, sugar, cornstarch and 1 tablespoon water in a small saucepot on medium heat. Bring to a simmer, stirring, and cook until thick and reduced, 5 to 10 minutes. Set aside and let cool for 10 minutes.
- For the base: Preheat the oven or a grill to 350 degrees F. Spray the bottom and sides of a 9-inch cast-iron pan, pie pan or 8-inch square baking pan.
- Prepare the brownie batter according to the box instructions. Pour half of the brownie batter into the prepared pan and spread evenly. Pour over the raspberry filling (you may not need it all), then add the remaining brownie batter. Break off little knobs of the cookie dough and place in splotches around the top of the pie. Bake or grill until the top is golden and a toothpick poked in the center doesn't come out wet with brownie batter, 20 to 25 minutes. Let cool slightly, then cut or scoop out and serve with ice cream, if desired.
FARMER'S MARKET RASPBERRY PIE (QUICK & EASY)

Steps:
- 1. Preheat oven to 400 degrees.
- 2. Place bottom crust in pie pan. Add berries to bottom crust.
- 3. Mix sugar, salt and cornstarch and sprinkle over berries.
- 4. Cover with lattice crust. Cover edges with foil, if desired.
- 5. Turn oven down to 350 degrees and place pie in the oven. Bake approximately 45-50 minutes.
EASY RASPBERRY CREAM PIE RECIPE BY TASTY

- Spray pan with cooking spray.
- In a bowl, combine fine graham cracker crumbs and butter. Press into pan. Put in oven for 5 to 10 minutes on 375°F. That will be your pie crust. Set aside.
- Now, in a medium bowl, mash berries. Combine with whipped cream and powdered sugar.
- Fill pie crust with mixture and refrigerate for 3-4 hours. Serve and enjoy!

EASY PEASY RASPBERRY PIE
If watching your weight you can use low fat cream cheese & light whipped topping and a store bought reduced fat graham cracker crust....it's still very tasty.

- 1. Mash about 2 cups of raspberries to measure 1 cup; place in a saucepan. Add sugar, cornstarch and water.
- 2. Bring to a boil, stirring constantly; cook & stir 2 minutes longer. Strain to remove seeds if desired. Cool to room temperature, about 20 minutes.
- 3. For Filling; Beat whipped topping, cream cheese and confectioners sugar in a mixing bowl. Spread into crust.
- 4. Top with remaining berries. Pour cooled raspberry sauce over top. Refrigerate for 3 hours.

- Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray (without flour).
- In medium bowl, stir peaches, cinnamon and nutmeg. Spoon mixture into pie plate; sprinkle with raspberries. In small bowl, stir 1/2 cup Bisquick mix, the whipping cream, 2/3 cup sugar, the eggs and almond extract until smooth. Pour mixture over fruit. Bake 10 minutes.
- Meanwhile, in another small bowl, stir 2 tablespoons Bisquick mix and 1/4 cup sugar. Cut in 2 tablespoons butter, with pastry blender or fork, until crumbly. Stir in almonds. Sprinkle topping over pie.
- Bake 30 to 35 minutes longer or until knife inserted in center comes out clean and topping is golden brown. Cool on cooling rack at least 1 hour before serving. Store covered in refrigerator.

- In a large bowl, combine the flour, sugar and salt; cut in shortening until mixture resembles coarse crumbs. Combine the egg, water and vinegar; stir into flour mixture just until moistened. Divide dough in half so that one ball is slightly larger than the other; wrap each in plastic wrap.
