MUSHROOM STEW
This is a delicious, hearty, heart-friendly vegetarian stew. I serve it with polenta, but it would be equally yummy ladled over mashed potatoes, sweet mashed potatoes or rice. Garnish with fresh herbs.

Steps:
- Place dried mushrooms in a small bowl with enough hot water to cover; let stand 20 minutes. Drain mushrooms; reserve liquid.
- Heat oil in a large pot over medium high heat and cook and stir onion until soft, about 5 minutes. Reduce heat to medium; stir in garlic, thyme, and cloves and cook and stir 2 minutes more. Stir fresh mushrooms and soaked dried mushrooms into onion mixture; cook and stir until mushrooms are soft, about 10 minutes. Season with salt and pepper.
- Stir tomatoes and reserved mushroom liquid into mushroom mixture; simmer over low heat until thickened, about 20 minutes.
- Bring vegetable stock to a boil; whisk in polenta. Cook polenta, whisking constantly, until polenta is thick and stock is absorbed, about 5 minutes. Divide polenta into 4 bowls; ladle mushroom stew over polenta and garnish with fresh parsley.

Steps:
- Heat the oil and butter in a saute pan over med-high heat.
- Add in pork and saute until brown on both sides, about 2 minutes per side.
- Remove pork to a plate; set aside.
- Sweat mushrooms, leeks, and carrot in the same pan over medium heat until softened, 3-4 minutes.
- Stir in the flour and cook 1 minute.
- Deglaze the pan with sherry, scraping up any bits on the bottom of the pan; reduce until evaporated.
- Stir in cider and broth; bring to a boil.
- Decrease heat to med-low; add pork with residual juices and 1 T thyme.
- Simmer stew until thickened, 5 minutes; season with salt and pepper.
- Serve stew with Apple-Potato Mash (they actually serve the stew over the mash).
- Garnish each serving with diced apple and a sprig of thyme.

- Melt butter in a skillet over medium heat. Add mushrooms and saute until tender, 4 to 5 minutes. Add garlic and cook until fragrant, about 1 more minute.
- Add chicken broth and simmer for 3 to 4 minutes.
- Pour in heavy whipping cream and season with paprika, salt, and pepper. Simmer until stew starts to thicken, 4 to 5 minutes.

DELICIOUS AND EASY PORK STEW
This is a very simple pork stew recipe that has lots of flavor, add in potatoes, small button mushrooms, carrots.. or whatever you want, it's a great starter recipe! You can really use any cut of pork that you want, I prefer the shoulder because it has the most flavor and is not dry. This tastes even better the following day! Serve this with hot cooked noodles and a crusty French baguette bread.

Steps:
- Heat oil in a heavy Dutch oven over medium-high heat.
- In a bowl mix together the flour, seasoning salt and pepper.
- Coat the pork in the flour mixture then brown well on all sides in the oil (working in batches) then remove to a bowl.
- Add in the onion, garlic, sage and crushed pepper flakes; saute for about 8 minutes.
- Return the pork to the pot and any juices from the plate.
- Add in remaining ingredients (along with any other ingredients such as potatoes, carrots or any other veggies) mix to combine and season with salt and pepper.
- Simmer over medium heat until pork is very tender (about 1 - 1-1/2 hours).

- Trim fat from pork loin roast and cut into 1-inch pieces. Dry pieces thoroughly with paper towels. Season pork pieces generously with salt and pepper.
- Heat oil and butter in a dutch oven or large heavy-bottomed pan over medium-high heat. When oil is hot, add seasoned pork and cook for 2 minutes on each side or until brown on all sides.
- Add 1 cup cider to the pan with the pork, turn down heat to medium, cover pan with a lid and simmer pork for about an hour. Check pork often making sure the liquid is not evaporating too quickly. If it is, turn down the heat to medium-low and add a little more water if liquid is gone.
- After an hour, remove pork and residual juices from pan and set aside. Most of the liquid should be evaporated, but there may still be some left.
