SCOTCH EGGS

A crispy coating made with cornflakes and pork sausage dresses up these Scotch eggs. They're fabulous hot out of the oven. Or enjoy them cold for a snack. -Dorothy Smith, El Dorado, Arkansas

Steps:

  • Divide the sausage into six portions; flatten and sprinkle with salt and pepper. Shape each portion around a peeled hard-boiled egg. Roll in beaten egg, then in cornflake crumbs. Place on a rack in a baking pan. Bake, uncovered, at 400° for 30 minutes or until meat is no longer pink, turning every 10 minutes.

1 pound bulk pork sausage

ELDORADO EGGS

This can be made the night before to save time. The choice of sausage can make a big difference. so choose wisely :) I like to use the hot sausage but feel free to use your favorite.

Steps:

  • Combine sausage, taco seasoning, bell pepper, onion, mushroom and chopped tomatoes. Cook until sausage is done. Remove to an 11x7 inch baking dish. Top with cheeses.
  • Combine remaining ingredients. Pour over vegetable mixture and cheeses. Bake at 375 degrees for 1 hour.

Air-Fryer Scotch Eggs image

Steps:

  • Preheat air fryer to 400°. Divide sausage into 6 portions; flatten and sprinkle with salt and pepper. Shape each portion around a peeled hard-boiled egg. Roll in beaten egg, then in cornflake crumbs. , Place in a single layer on greased tray in air-fryer basket. Cook until meat is no longer pink, turning halfway through, 12-15 minutes.

El Dorado Mexican Casserole image

Steps:

  • Brown ground beef in large skillet, stirring until crumbly.
  • Add onion, salt, pepper, garlic salt and powder, tomato sauce, catsup and olives, mixing well.
  • Simmer until onions are tender, stirring frequently.
  • Combine sour cream, cottage cheese and chili pepper in small bowl.
  • Layer tortilla chips, ground beef mixture, sour cream mixture and Monterey Jack cheese alternately in large greased casserole, ending with grated Monterey Jack cheese.
  • Bake at 350 degrees for 30 minutes.
  • Serve with picante sauce.
