ELK BURGER DUMPLING STEW

Steps:
- NOTE: of course the game meat should be Elk. The computer would not take it when I tried to enter it.
- Make your favorite dumpling recipe up for six people.
- Mix the first four ingredients, shape lightly into patties or small cakes and sear in fat in hot frying pan until well browned; remove cakes.
- Stir flour into dumplings in pan, add water, tomato juice and chili sauce and bring to a boil.
- Return patties to pan and drop 1 tablespoons dumpling mixture on top of each, cover tightly and cook 10 minutes. Approximate yield: 6 portions.

Steps:
- Mix all seasonings.
- Add to meat.
- Mix well with hands.
- Refrigerate covered overnight.
- Mix again.
- Refrigerate covered another night.
- Form meat into 5 rolls.
- Place rolls about 2" apart on rack in large shallow pan.
- Place in center of 350 oven.
- Bake 10 minute.
- Reduce heat to 200 and bake 8 hr, turning every 2 hours.
- Drain off grease as necessary.
- Outside will be dark and glossy.
- Inside will be pink.
- Cool.
- Wrap each individually in foil.
- Keeps in fridge 2 weeks or in freezer 4 wks.

RAVEN'S STEW
I love venison stew. You will enjoy this tasty dish. You may substitute Elk or Moose meat. We serve it on rice, but you could also serve it alone or on top of mashed potatoes or broad egg noodles.

Steps:
- In a crock pot, add the venison and cover with the bacon slices.
- Place the garlic, onion, potatoes, carrots, parsnips and apple around the vension meat.
- Season well with salt, pepper, thyme and parsley.
- Pour the apple cider over everything and cook on low for 6 - 8 hours.
- If you prefer a thicker gravy, add a little flour and water mix and allow to cook till thickened.
- Serve to your preference and enjoy.

TURKEY DUMPLING STEW
This recipe comes from The Taste of Home "light & Tasty" 2003 cookbook. I love it, and so does my family. Last time I made it I only got one bowl! The best part is that's it's healthy and hearty. Enjoy!

- In a dutch oven or large saucepan, cook the bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 teaspoons drippings.
- Cook turkey in the drippings until no longer pink. Add the carrots, 1 3/4 cups water, broth, onions, celery, rosemary, and bay leaf.Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until vegetables are tender.
- Combine flour and remaining water until smooth; stir into turkey mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaf. Stir in the salt, pepper, and reserved bacon.
- In a bowl, combine biscuit mix and milk.
- Drop batter in six mounds onto simmering stew.
- Cover and simmer for 15 minutes or until a toothpick inserted into dumplings comes out clean.

- Melt butter in heavy skillet over medium heat.
- Brown meat on four sides.
- Remove meat from skillet and place in a large slow cooker.
- Add remaining ingredients, except flour.
- Cook on low for 8 hours or until meat falls apart with a fork.
- Remove meat and vegetables to serving platter.
- Keep warm.
- Blend flour into 1 cup broth.
- Place in saucepan with remaining broth and bring to boil.
- Cook, stirring constantly, for 2-3 minutes, or until thick.
- Serve with sliced meat and vegetables.
- Serves 4-6.

- Dice onion, carrots, celery (including leafy parts) and potatoes, add to stock pot with olive oil and saute over medium heat until onions are translucent. Add corn, beans, vegetable stock, and a dash of salt and pepper. Add 1 tbsp flour, bring soup to a boil for one minute then reduce heat to simmer. With an immersion blender, do a few short bursts. Do not blend until smooth. Alternatively, scoop two cups of soup into a blender or food processor, and blend till smooth, return to pot. In a separate bowl beat 2 eggs, add 1/2 cup flour and stir. Add 1 tbsp water and stir till smooth. Bring soup to a boil and drop batter in by a teaspoon. Dumplings will cook quickly.
