LOADED WAFFLE FRIES

Make any dinner fun with my Loaded Waffle Fries, topped with a savory blend of cheese, scallions and bacon. I copied this family-favorite recipe from a local restaurant, and it's great with hot dogs, burgers or by itself. -Jeffrey Viccone, Decatur, Illinois

Steps:

  • Arrange waffle fries in a greased 15x10x1-in. baking pan. Bake at 450° for 20-25 minutes or until lightly browned. , Sprinkle with steak seasoning; toss to combine. Top with remaining ingredients. Bake 2-3 minutes longer or until cheese is melted.

1/2 to 1-1/2 teaspoons steak seasoning
1 cup shredded cheddar cheese
2 tablespoons chopped green onions
2 tablespoons real bacon bits

Thin and Crispy Waffle Fries image

Steps:

  • Using a crinkle cutter or mandoline with a crinkle blade, carefully slice the potatoes 1/4 inch thick, rotating the potatoes 90 degrees between each cut. This will create the waffle appearance. Place the potatoes in a large bowl and cover with cold water. Cover and place in the fridge for 1 hour.
  • Mix the seasoning salt, paprika, pepper, garlic powder, onion powder and cayenne in a small bowl and set aside.
  • Remove the potatoes from the fridge and drain. Transfer to a baking sheet and pat dry with paper towels.
  • Heat a few inches of vegetable oil to 260 degrees F in a large heavy pot. Fry the potatoes in one batch for about 2 minutes, or until soft. They should not be brown at all at this point; you just want to start the cooking process. Remove and drain them on new, dry paper towels.
  • Turn up the heat until the oil reaches 325 degrees F. Return the potatoes to the oil and fry until golden and crisp, about 3 minutes. Remove the fries from the oil and drain on fresh paper towels. Sprinkle with the seasoning mix, toss to coat and serve with ketchup or sour cream dip.

2 large russet potatoes (approximately 2 pounds)
1 teaspoon seasoning salt
1/2 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon cayenne
About 3 quarts vegetable oil, for frying
Ketchup or sour cream dip, for serving

I had the pleasure of dining in The Elote Cafe in Sedona and met Chef Jeff Smedstad, formerly of Los Sombreros in Scottsdale. Reservations are not accepted and his foodie fans start lining up at 4:30, just to get a seat! I loved the food so much, I bought his cookbook and had it autographed. P.S. Elote Appetizer from the Elote Cafe image

Steps:

  • Over a medium-high grill, roast the corn until the husks are well charred, about 5 minutes. Turn occasionally so as not to burn the side contacting the direct heat.
  • Set the roasted ears aside until cool enough to handle, then shuck them.
  • Cut the kernels off the cob.
  • When ready to eat, mix the mayo, hot sauce, lime juice, pepper, salt and chicken stock in a sauté pan over medium heat.
  • Add the corn kernels and warm through,.
  • Pour into a bowl and garnish with the cheese, cilantro and ground chili.
  • Serve immediately with crispy tortilla chips.

6 ears corn, husks intact
1 cup mayonnaise
1 tablespoon cholula brand hot sauce
2 tablespoons fresh lime juice
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon sugar
1/4 cup chicken stock
1/4 cup Cotija cheese, crumbled for garnish
2 teaspoons cilantro, chopped, for garnish
pure ground red chili pepper, for garnish
crispy tortilla chips, for scooping

  • While the fries are baking, start preparing the corn. In a medium pan, add the butter and heat over medium heat. Season the corn with a little salt and pepper and the chili powder. Spread the corn into an even layer and cook for about 10 minutes, stirring occasionally and squeezing one lime wedge over top. You want the corn to get browned! After it has browned, pour into a bowl.
  • Transfer the cooked waffle fries onto a foil lined baking sheet, top with the shredded Pepper Jack cheese and the corn. Broil for about 4 minutes so the cheese melts and gets browned and bubbly.
  • To finish the fries, top with a generous amount of the cotija cheese and drizzle with the crema. Then, squeeze 1-2 lime wedges over top. Enjoy!
