Steps:

  • Prepare White Wine Sauce: Melt the butter in a saucepan and add the shallots, mushrooms, salt and pepper and cook until soft, 3 to 4 minutes. Increase heat to high, add the wine and reduce by half. Add the clam juice and again reduce by half. Strain sauce into a clean saucepan and add the cream. Bring to a boil and reduce slightly until sauce begins to thicken. Adjust seasoning with salt, pepper, Tabasco pepper sauce and lemon if needed.
  • Preheat the broiler as hot as possible.
  • Brush 4 large dinner plates lightly with olive oil. Slice the salmon in very thin escalopes and cover each plate completely with the fish.
  • Bring 1 1/2 cups of the White Wine Sauce to a boil and add the cucumber, squash, tomato, and chives. Return to a boil and spoon hot sauce over each plate, covering the salmon completely. Place the plates directly under the broiler and cook 2 to 4 minutes or until sauce begins to bubble and fish is just barely cooked. Serve immediately with chervil sprinkled generously over each dish.

Steps:

  • Add 25g of Butter to a small sauti pan.
  • Add Chanterelles and shallots, cover with a lid and sweat for a few minutes.
  • Make a space for the salmon in the pan, add wine and fish stock.
  • Poach for 4-5 minutes, take out fish and keep warm.
  • Reduce cooking liquid by two thirds, take out mushrooms.
  • Cut butter into small cubes and whisk in to make sauce. Add lemon juice abd peas.
  • Return mushrooms, add broad beans and peas, check seasoning.
  • Place salmon on plate with sauce to the side I found this recipe on a site among others.

Salmon With Chanterelles And Red Pepper Puree image

Steps:

  • Preheat the oven to 350 degrees. Put the peppers in a baking dish and put them in the oven. Roast them for 10 to 12 minutes. The skin will shrivel and begin to blacken in spots. Let the peppers cool in a paper bag. Remove the skin from them then slit the peppers open and remove the stems, seeds and veins.
  • Put the peppers in a blender and add the lemon juice, sugar and salt. Blend to a smooth puree. Put the puree in a small saucepan and warm it slightly.
  • Heat the oil in a saute pan and add the onion. Cook for one minute, then add the chanterelles, reduce the heat, cover and cook for 10 minutes, adding a little water if needed.
  • Grill the salmon fillets or bake them on a lined baking sheet in a 350-degree oven for 12 to 15 minutes.
  • When the salmon is done, put some of the red pepper puree in the middle of each plate. Cover the puree with some of the mushrooms, put the salmon fillets on top and serve.

Whole Grilled Salmon with Chanterelles image

Steps:

  • Chanterelles:
  • Heat a large skillet, preferably cast iron, over medium-high. Add butter and oil and swirl pan until butter is melted. Add mushrooms, thyme, and garlic and season with salt and pepper. Cook, tossing often, until mushrooms are golden brown and tender, 5-8 minutes; set aside.
  • Salmon and assembly:
  • Prepare a grill for medium-low heat. Using a sharp knife, make a slit along belly of salmon, running from rib cage to tail. Turn salmon on its back and cut along both sides of backbone without piercing through skin on other side. Carefully remove backbone without tearing skin, then remove pin bones with small needle-nose pliers or tweezers. Season inside of fish with salt and pepper and stuff lemon slices, dill, thyme, and tarragon inside cavity. Tie wet kitchen twine around fish in several places to secure. Place on a rimmed baking sheet; rub skin all over with oil.
  • Carefully place fish on grill grates and grill, uncovered, until flesh on bottom side is mostly opaque but still slightly translucent in the center, 12-18 minutes. Carefully turn fish and cook on the other side to the same doneness, 8-10 minutes. Transfer fish to a clean rimmed baking sheet and let rest at least 10 minutes.
  • Place skillet with chanterelles directly on edge of grill to reheat while you portion the fish. Remove strings and peel back skin from salmon; discard. Break flesh of top fillet into large pieces and transfer to a platter. Discard aromatics and remove skin from bottom fillet, break up, and transfer to platter. Season with more salt and pepper and spoon warm chanterelles over.

4 tablespoons unsalted butter
2 tablespoons grapeseed or vegetable oil
1 pound chanterelle mushrooms or other wild mushrooms, halved if large
2 sprigs thyme
2 garlic cloves, smashed

CHANTERELLES ON TOAST

Mushrooms are like sponges full of water. When subjected to heat, they release their liquid, and after some of it evaporates, they will suck the rest back up. So in this recipe from the chef Hugh Acheson start by letting the chanterelles hit the hot oil, sizzle and then color a bit. Liquid will exude into the pan, partly evaporate and then return into the mushrooms. Once the pan is pretty much liquid-free, it's time to reintroduce flavorful liquids, which the mushrooms will also take up.

Chanterelles on Toast image

Steps:

  • Heat your largest fry pan over medium-high heat, and when it is hot, add the olive oil. Once the olive oil is hot, add the chanterelles. Cook for 4 minutes without moving them around too much.
  • Add the sherry vinegar and the lemon juice and cook down until fully reduced. Add the stock and reduce by half (you are not exactly reducing so much as hydrating the mushrooms). Add the rosemary, thyme, parsley and butter. Stir with a wooden spoon to incorporate the butter. Season with salt and pepper.
  • Evenly spoon the chanterelles over the 4 pieces of toasted bread and garnish with shaved Parmesan.

  • Cut the salmon fillet by slicing through the fillet, not down, to make two scallops. Carefully check for and remove all bones.
  • Place the salmon between wax paper and gently flatten the salmon with a mallet or rolling pin to make more uniform in thickness. Salt lightly.
  • Melt 2 tablespoons of butter in a sauté pan. Add the shallots and mushrooms. Saute about a minute or two to soften the onions and mushrooms. Do not brown.
  • Add the water and wine to the pan and bring to a low simmer. Allow the mixture to simmer for about 10-15 minutes. First, this will create a stock, then we will reduce it down to a thicker reduction. (If the stock is simmering too quickly, add water. The mushrooms should cook for at least 10 minutes.) You should have about a tablespoon or two of liquid at this point.
