FAST MICROWAVE FUDGE- NUT FREE

5 minutes to fantabulous SMOOOTH fudge! You have to try it to believe it! I make this every year for Christmas to give to friends and neighbors and they can't wait to get their goodie bags!

Fast Microwave Fudge- Nut Free image

Steps:

  • Line an 8x8 pan with foil and butter it well.
  • Place all ingredients except for extract in a glass dish and microwave on high for 1 and 1/2 minutes.
  • Stir until smooth.
  • Stir in vanilla and spread into prepared pan.
  • Cover and refrigerate for 2 hours.
  • Remove from pan and cut into desired shape. Store at room temperature in an airtight container.

Steps:

  • Microwave 12 ounces semisweet chocolate chips and a 14-ounce can sweetened condensed milk, 5 minutes. Stir vigorously, then add 1 1/2 cups chopped nuts and 1 teaspoon vanilla extract. Spread in an 8-inch-square pan lined with buttered parchment paper. Refrigerate, then cut into squares.

Steps:

  • Line an 8-inch square baking pan with aluminum foil.
  • Place chocolate in a food processor; pulse until finely chopped.
  • Pour evaporated milk into a microwave-safe bowl. Stir in sweetener, 1/2 cup at a time, until dissolved. Add vanilla extract. Stir in chopped chocolate.
  • Heat mixture in the microwave in 30-second intervals, stirring after each interval, until chocolate is melted and smooth, about 2 minutes total. Stir in walnuts.
  • Spread chocolate mixture in the prepared pan. Refrigerate until firm, about 2 hours. Cut into 1 1/2-inch squares.

Steps:

  • Line a baking dish with parchment or waxed paper.
  • Combine peanut butter and butter in a microwave-safe bowl. Microwave on high in 30-second increments, stirring in between, until melted and thoroughly combined. Allow mixture to sit and cool for 2 to 3 minutes.
  • Mix in powdered sugar, 1/2 cup at a time, until well incorporated. Press into the prepared dish and place in the refrigerator. Chill for at least 2 hours before serving, or overnight for a firmer fudge.

  • Melt chocolate either in the microwave in 30-second increments, or over a double boiler (medium saucepan with 1 inch of water, simmering, and a glass or metal bowl over top that rests high enough that it doesn't touch the water) on the stovetop. Once melted, remove from heat.
  • To the melted chocolate add nut butter and whisk to combine. Then add honey (starting with the lesser amount and working your way up to taste) and salt (optional) and stir or whisk to combine.
  • Transfer to a parchment-lined loaf pan (or 8x8” baking dish) and (optionally) top with a few more dollops of nut butter and swirl with a knife or toothpick (see photo).
