FAT FREE SKILLET HOME FRIES
I love home fries but can't have them on my diet because they are fried. So, when I saw this recipe in the 'Eat Up, Slim Down' cookbook put out by Prevention magazine I wanted to put it here so I had it the next time the mood strikes.

Steps:
- In a large, heavy nonstick skillet, heat 1/2 cup broth to boiling.
- Add potatoes, scallions, onion salt, garlic powder, sage, pepper and paprika.
- Cover and cook over high heat 5 minutes, or until liquid is absorbed, turning potatoes occasionally.
- Reduce heat to low and cook 10 minutes, adding broth as needed until potatoes are tender and browned.

SKILLET HOME FRIES
Steps:
- Heat oil in a cast iron skillet over medium heat. Add onion and saute until soft. Add poblano, red pepper and garlic and cook for 1 minute. Add paprika and cook for 1 minute. Add potatoes and season with salt and pepper to taste. Cover and cook until almost cooked through. Remove cover and continue cooking for 5 to 10 minutes until golden brown.
QUICK AND EASY HOME FRIES
A quick way to make crispy home fries. Great for breakfast or as a side dish. Potatoes may be shredded and cooked in the same manner for crispy hash browns.

- Rinse potato cubes with cold water, and drain well. Melt butter or margarine in a large skillet over medium heat. Place potatoes in the skillet, and stir to coat with butter. HOME FRIES

- Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
- Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
- Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. EASY FAT-FREE SEASONED FRENCH FRIES
I just started making these, and thought I'd share since I didn't see anything exactly like it. Great for a individual snack!

Steps:
- Preheat oven to 450 degrees.
- Cover an 8"x8" pan with tin foil and spray with cooking oil and sprinkle on salt.
- Cut potato to desired wedge sizes.
- Place potato pieces into quart size bag and spray in some cooking oil and add the herbs.
- Shake until the pieces are coated evenly.
- Pour into the 8"x8" pan and add some more salt on top (I like mine really saltly).
- Place in oven and bake for 15-20 minutes for softer fries and 25-30 minutes for crispier fries.
- Enjoy with sauce of your choice!
HOME FRIES
When I bake potatoes I make extra for home fries, I bake them in foil so they will be soft on the outside. Make sure to use plenty of butter when making these and fry them slowly and resist the temptation to flip them constantly, you want them to brown but not burn. Baking time is not included in prep. time.

- Melt 2 Tbl. butter in skillet on medium heat and cook the onions until just soft.
- Add the potatoes that have been cut into small chunks,garlic salt and pepper to taste and another 2 tbl. butter. Cook on medium heat browning slowly and adding butter 2 tbl. at a time until browned.
- It should take approximately 30 minutes to make these depending on your stove and amount of spuds you use.

- Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
