Mom's Favorite Candy Bars image

Steps:

  • Heat oven to 375°F. Spray 13x9-inch pan with cooking spray.
  • In 2 quart saucepan melt butter, corn syrup and 1/4 cup of the peanut butter over medium heat stirring frequently until melted. Stir in cookie mix until soft dough forms. Press dough in bottom of prepared pan.
  • Bake 11 to 13 minutes, or until edges begin to brown. Cool completely, about 45 minutes.
  • In medium microwavable bowl, mix chocolate chips, butterscotch chips and remaining 1/2 cup peanut butter. Microwave uncovered on High for 1 to 2 minutes, stirring once, until melted. Stir in peanuts. Spread evenly over cookie bars. Refrigerate about 1 hour or until chocolate is set. For bars, cut into 8 rows by 4 rows.

Steps:

  • In a small saucepan, bring 2 cups water to a boil over medium-high heat; stir in oats. When oatmeal begins to thicken, reduce heat, and simmer, stirring occasionally, for 30 minutes.
  • Divide oatmeal between 2 bowls; stir in milk, raisins, brown sugar or brown rice, if desired. Serve.

1/2 cup steel cut oats, preferably McCann's
Skim milk, golden raisins, brown sugar, and cooked brown rice (optional)

  • 1. Melt butter in large saucepan. Stir in sugar, cocoa powder and milk. Stirr continually and bring to a boil.
  • 2. Add vanilla and peanut butter, quickly stirring to blend until creamy.
  • 3. Remove from heat and stir in oats until blended. Stir until it holds a shape.
  • 4. Dip out teaspoonfuls onto waxed paper and allow to cool until firm. When cool, store in an airtight container for up to 2 weeks.

1 stick butter, softened

  • 1. bring butter and corn syrup to a boil in a large saucepan. remove from heat and stir in brown sugar, oats, flour and cinnamon and mix well.
  • 2. return to heat and turn burner to medium heat. cook slowly, stirring often, until mixture comes to softball stage.
  • 3. remove from heat and stir in vanilla. pour into a 9x13 inch buttered dish and cool completely, about 4 hours or more.
  • 4. cut into squares, roll in powdered sugar, sprinkle with a little cinnamon and wrap in waxed paper.
