Greek Feta Salad image

Steps:

  • On a serving platter, layer tomatoes and onion. Top with feta cheese and olives. In a small bowl, whisk the oil, vinegar and oregano; drizzle over salad. Serve with a slotted spoon.

Feta cakes with Greek salad image

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and oil a non-stick baking sheet. Bring a pan of water to the boil, add the potatoes and cook for 15-20 mins until tender. Drain very well, then return to the pan and mash with lots of black pepper, the lemon zest and juice, the spring onions, mint and 2 tbsp of the parsley. Stir through the feta.
  • Beat the egg in a shallow bowl, then mix the flour, paprika and remaining 1 tbsp parsley in another. Shape the potato mixture into eight cakes, then carefully coat all over in the egg, then the flour mix, reshaping them if you need to. Arrange the cakes on the baking sheet and bake for 15 mins until starting to turn golden. Use a palette knife to carefully turn each one over and bake for another 10-15 mins until golden.
  • Meanwhile, toss half the salad with half the lemon and oil. Serve with four cakes and chill the remainder for another day, tossing the remaining salad with the rest of the lemon and oil just before serving. Will keep, covered, for up to two days in the fridge. To reheat the cakes, cook on a baking tray at 200C/180C fan/gas 6 for 15-20 mins.

Feta & Herb Greek Salad with Chicken image

Steps:

  • Preheat the broiler.
  • Toss the chicken in a large bowl with 1/4 cup of the Greek Feta Herb Vinaigrette and sprinkle with salt and pepper. Set aside while you assemble the salad.
  • Lay the romaine on a large deep platter (or 4 wide, shallow bowls). Top with the tomatoes, bell pepper, cucumbers and olives.
  • Arrange the chicken on a baking sheet and broil, turning once, until browned and cooked through, about 8 minutes per side. Let the chicken cool for a few minutes and then slice.
  • Serve the warm chicken on the salad. Sprinkle with the pita chips and feta. Drizzle with the remaining vinaigrette.

Greek Salad with Couscous and Spicy Feta Cheese image

Steps:

  • Heat a skillet over low heat. Add oregano and chili powder to the dry, hot skillet; cook and stir until fragrant and toasted, about 1 minute. Remove from heat and mix with olive oil. Pour over feta cheese and let marinate for at least 30 minutes.
  • Meanwhile, bring 1 cup water to a boil. Pour boiling water over the couscous and wrap it with plastic for 10 minutes.
  • Stir cucumber, tomato, bell pepper, onion, black and green olives, 2 tablespoons oil, and garlic into the warm couscous.
  • Mix oil, balsamic vinegar, white wine vinegar, and soy sauce for the salad dressing together. Pour over salad.

  • Bring a pot of water to boil for the orzo. Cook according to package directions. Prepare the zucchini cake mixture. Make sure the zucchini is completely squeezed of moisture. I used a kitchen towel and really put some muscle into it haha.
  • Combine zucchini, egg, mint, parsley, panko, almond meal, feta, garlic powder, onion powder, salt, and pepper in a medium bowl. Stir to combine and refrigerate for 30 minutes while you assemble the orzo salad.
  • Combine orzo (I like to let mine cool for a bit), grape tomatoes, cucumber, sundried tomatoes, artichoke hearts, red onion, olives if using, parsley, and oregano in a large bowl. Toss to combine. Add the lemon juice, red wine vinegar, salt, olive oil, salt, and pepper and toss again. Refrigerate until ready to serve.
  • Form the zucchini mixture into 10-12 patties. If the mixture seems too wet, add a handful or two of panko. Heat a large nonstick skillet over medium/high heat and add a tablespoon of olive oil. Cook the cakes for 2-3 minutes per side, until golden. Serve atop orzo salad and additional feta and fresh herbs!
