Since I have a large vegetable and herb garden, many of the ingredients in this recipe are truly "homegrown". I found this simple recipe in a magazine years ago and it quickly became a favorite at family picnics. I have five married children and seven grandchildren, and they all love to come home for some of "Mom's cooking". -Wilma Purcell, Alma, Illinois

Steps:

Place tomato wedges in a large bowl. Place remaining ingredients in a blender; cover and process until blended. Pour dressing over tomatoes and toss gently. Chill before serving.

6 medium fresh tomatoes, cut into wedges
2/3 cup vegetable oil
1/4 cup white wine vinegar
1/4 cup snipped fresh parsley
1/4 cup sliced green onions
1 garlic clove, minced
2 tablespoons mayonnaise
1 teaspoon dill weed
1 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano

Colorado Wedge Salad image

Steps:

For the buttermilk dressing: In a large bowl, add the buttermilk, mayonnaise, sour cream, ketchup, vinegar, hot sauce, garlic and some salt and pepper. Add the chives and parsley and whisk together. Adjust the consistency with more buttermilk or mayonnaise. Taste and adjust the seasoning. Refrigerate until using.
For the salad: To serve, place the iceberg wedges on individual plates. Drizzle 2 to 3 tablespoons of dressing over each. Top with the red onions, tomatoes and blue cheese. Place 3 whole bacon strips over each and garnish with the chives. Serve with extra dressing on the side.

1 teaspoon white vinegar
Few shakes hot sauce
1 clove garlic, very finely chopped

2 tablespoons finely chopped fresh parsley
5 large wedges iceberg lettuce
1 small red onion, finely chopped
4 Roma tomatoes, finely chopped
One 5-ounce container blue cheese crumbles
15 strips crisp-fried bacon
2 tablespoons finely chopped chives, for garnish

Steps:

In a large bow, combine the vegetables; set aside. In a saucepan, heat the sugar, vinegar, oil, water, salt and pepper over medium heat until sugar is dissolved. Pour warm dressing over vegetables; toss to coat. Cover and refrigerate for 2 hours or overnight. Serve with a slotted spoon.

Remove any outer leaves from the lettuce that look brown or discolored. Take a small knife and cut the core of the lettuce from the bottom of the lettuce. Cut the head of lettuce into quarters.
To assemble salads, drizzle top of each wedge with salad dressing. Top with shredded cheese, chopped tomato, cilantro leaves, olives and tortilla strips. Serve immediately.
