FIG NUT CANDY

An easy-peasy sweet little bite from the Western chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

Steps:

  • Immerse figs in boiling water for ten minutes; dry thoroughly, clip stems and grind.
  • Blend with nuts and pat into a thin square.
  • Spread with half of the melted chocolate; cool.
  • Turn square over and repeat.
  • Cut into pieces and serve.

2 cups nuts, crushed
1/2 lb chocolate-flavored candy coating or 1/2 lb chocolate chips, melted

FIG AND HONEY JAM WITH WALNUTS

I recently made a meat and cheese board for my family and wanted to make a jam/preserve with it that we normally wouldn't have. Figs came to mind and, after searching around a little and getting a few ideas, I came up with this. It was such a huge hit that I decided to share it. I hope that everyone enjoys it as much as we did! It will last for up to 30 days if you do not can it.

Fig and Honey Jam with Walnuts image

Steps:

  • Combine figs, honey, water, butter, lemon juice, cinnamon, vanilla extract, cloves, salt, and ginger in a large pot; bring to a boil. Reduce heat and simmer until figs are soft, about 1 hour 15 minutes.
  • Blend figs with an immersion blender until mixture reaches desired consistency. Stir in walnuts. Cook until flavors combine, about 15 minutes.
  • Remove pot from heat and pour fig mixture into a container; transfer to the refrigerator.

  • Preheat oven to 350 degrees F (176 C) and arrange oats and nuts on a baking sheet. Bake for 8-12 minutes, rotating the pan near the the halfway mark to ensure even cooking, until golden brown and fragrant. Set aside.
  • Once slightly cooled, add oats, nuts, and sea salt to a food processor and process into a fine meal with salt. Remove from processor and set aside.
  • Add pitted dates to food processor and mix/pulse until small bits remain or it forms a ball. Scoop out and set aside.
  • Add nuts and oats back to food processor and spoon in the mixed dates. Mix/pulse until a loose dough is formed when squeezed between two fingers.
