FILIPINO ITLOG NA MAALAT AT KAMATIS (EGG AND TOMATO SALAD)
This recipe has been passed to me from my Filipino mother. It's a filipino egg and tomato salad. I eat it with plain rice but can also be eaten with fried fish and spam / salted pork. It's traditionally made with salted duck eggs but I use regular hard boiled eggs.

Steps:
- Mix all ingredients well. I like to mix mine where the yolks have dissolved and forms a nice cream to the salad.
- Place in refrigerator for 2 hours or longer.
- Serve cold with hot rice.

- In a large pot over medium heat, place pork bones, tomatoes, onions, and water into the pot. Bring to a boil. Remove any scum that rises to the surface and discard. Cover and let simmer until the meat of the pork bones are tender. (Alternatively, use a pressure cooker and pressure cook for 1 hour once scum has been removed.)
- Once tender, remove the lid and taste the soup for seasoning. Season with patis (fish sauce) as desired. (If using a pressure cooker, release the pressure before opening the lid.)
- Add sitaw (string beans) and simmer for 1 minute or until the green beans are just tender to the bite. Serve while hot with steamed rice.
