SWEET AND SPICY SWEET POTATOES

Steps:
- Preheat an oven to 425 degrees F (220 degrees C).
- Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.
- Bake in the preheated oven for 15 minutes, then turn the potatoes over with a spatula, and continue baking until the sweet potatoes are golden and tender, 10 to 15 minutes more.

FIVE-SPICE GLAZED SWEET POTATOES W/WALNUT TOFFEE

- 1. Prehaet oven to 400. Spread the sweet potatoe chunks in two 9x13 " baking dishes. Add 1 cup of water to each dish, cover w/foil & bake for about 25 mins, until tender. Pour off any remaining water from the baking dishes. 2. In a small saucepan, combine the brown sugar w/ the butter, five-spice powder & nutmeg & cook over moderate heat until it is melted & the mixture is bubbling, about 4 mins. Pour the mixture over the potatoes; stir to coat & season w/salt. Bake for @ 10 mins, basting a few times, until the potatoes are tender & nicely glazed. Sprinkle w/ Walnut Toffee & serve. - If using fresh sweet potatoes, place in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook 25-40 minutes or until tender. Drain; cool slightly and peel. Cut into chunks., Preheat oven to 350°. Place sweet potatoes in a 2-qt. baking dish. In a small saucepan, combine butter, syrup, brown sugar and cinnamon; bring to a boil, stirring constantly.
