BERRIES AND CREAM FLOATS

"Red cream soda is the perfect base for an ice cream float."

Berries and Cream Floats image

Steps:

  • Make the vanilla whipped cream: Whisk the heavy cream, confectioners' sugar and vanilla bean paste in a large bowl until stiff peaks form.
  • Alternate the berries and 2 scoops ice cream in each of 4 glasses. Pour in the soda, then top each glass with a large dollop of vanilla whipped cream.

1 cup cold heavy cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla bean paste (or seeds from 1 vanilla bean)
1 cup mixed berries
2 pints vanilla ice cream
1 1-liter bottle red cream soda

Floating Fruit Parfaits image

Steps:

  • Divide strawberries (or cantaloupe) between 6 tall dessert glasses.
  • Stir boiling water into dry jello in medium bowl at least 2 minutes til completely dissolved.
  • Add cold water and ice cubes, strring until ice is completely melted.
  • Remove 3/4 cup jello and pour evenly over berries.
  • Refrigerate 20 minutes or until jello is set but not firm.
  • Add 1 cup cool whip to remaining jello.
  • Stir with gently wire whisk til well blended.
  • Spoon evenly over jello.
  • Refrigerate 1 hour or until firm.
  • Top each parfait with 1 TBS cool whip just before serving.
  • Store leftovers in the refrigerator.

You will think you are "floating" in a dream, when you taste this. Most of the work here takes place in the fridge! I did not include this time in the preparation area.

Steps:

  • Mix strawberries and Splenda in a bowl, cover and chill overnight or for at least three hours.
  • Beat cheese and powdered sugar until smooth. Add extracts. Stir. Fold in Cool Whip gently. Add blueberries and glaze to strawberries, stir together.
  • Tear cake into bite-size chunks.
  • In clear bowl, place 1/2 cake, then 1/2 cream mixture, then 1/2 fruit mixture. Repeat.
  • Cover and chill for several hours or overnight.
