FLOWER POWER COOKIE POPS

Turn Betty Crocker® sugar cookie mix into colorful flower shaped cookie pops for perfect dessert treat.

Steps:

  • Heat oven to 375°F. In medium bowl, stir cookie mix, flour, butter and eggs until dough forms. Divide dough evenly into 5 portions; tint each portion with different paste food color, kneading until blended.
  • Break off 2-inch portions of each color dough. On lightly floured surface, gently press dough portions together to form a large round, about 1 inch thick. Roll dough to 1/4-inch thickness. Cut with 3-inch flower-shaped cookie cutter. On ungreased cookie sheets, place cutouts 2 inches apart. Insert 1 lollipop stick halfway into center of each cookie.
  • Bake 10 to 12 minutes or until set. Cool 5 minutes; remove from cookie sheets to cooling racks. Cool completely.

Steps:

  • With an electric mixer or by hand, beat the butter, granulated sugar, brown sugar, applesauce and vanilla in a bowl. Slowly add in the almond flour and salt. Mix in the chocolate chips. Refrigerate the dough for at least 20 minutes (or overnight) to make it easier to scoop.
  • Using a mini ice-cream scooper, scoop the dough into little balls. Roll the dough into each topping separately, add sticks and freeze for at least 30 minutes.

2/3 cup butter, at room temperature
3/4 cup granulated sugar
1/4 cup dark brown sugar
1/4 cup applesauce
1 teaspoon vanilla extract
2 cups almond flour
1/2 teaspoon salt
1 cup mini chocolate chips
Crushed cereal, sprinkles and chopped peanuts, for garnish (see Cook's Note)

RAINBOW PRIDE POPS

For many people in the LGBTQIA+ community, Pride is practically a national holiday. For me, it's a time to gather with my friends and chosen family to celebrate queer culture, and to connect with other gay parents. (As a dad, I always make sure to participate in Family Pride Days.) When we decided to include rainbow ice pops for Pride in this issue, I jumped at the opportunity to create them. I considered many different types of ingredients, like fruit juices or purees, but the colors weren't bright enough. Then it hit me: Fruit-flavored Jell-O would be perfect! The colors turn out super vibrant - just like the Pride Flag.

Rainbow Pride Pops image

Steps:

  • Place each Jell-O flavor in a separate small bowl. Whisk 1 teaspoon superfine sugar into each bowl.
  • Starting with the strawberry and working with one flavor at a time, pour 1/2 cup plus 2 tablespoons boiling water into each bowl. Stir gently until the gelatin and sugar dissolve.
  • Evenly divide the strawberry gelatin among ten 3-ounce ice pop molds using a small liquid measuring cup (about 1 tablespoon per mold). Freeze until just set, about 15 minutes. Repeat with the remaining flavors in this order: orange, lemon, lime, berry blue and grape.
  • Place the lid on the ice pop mold and insert wooden sticks. Freeze until completely solid, about 8 hours or overnight.
  • Remove the pops from the freezer. Let stand at room temperature until they slide out easily, about 10 minutes.

5 teaspoons each strawberry, orange, lemon, lime, berry blue and grape Jell-O powder

Everyone loves cake pops! They are simple to make, and you can create anything for any occasion. They are also nice small bites of dessert instead of large slices of cake or pie. Can be made up in partial batches and the remaining ingredients stored for a few weeks.

Simple Cake Pops image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat cake mix, water, eggs, and oil in a bowl using an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for 2 minutes more. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 28 to 33 minutes. Cool completely, at least 1 hour.
  • Crumble cake into a large bowl. Stir frosting into cake crumbles until mixture is sticky but not too smooth. Chill in refrigerator, at least 30 minutes.
  • Roll cake mixture into 1 1/2-inch balls and arrange on a baking sheet. Place 1 lollipop stick into each ball.
  • Melt about 1/4 cup chocolate candy melts in a microwave-safe bowl in the microwave, about 20 seconds. Dip each cake pop in the melted chocolate. Repeat melting chocolate and dipping remaining cake pops. Decorate pops with decorating icing.

Add the 1/3 cup sugar, the orange peel, baking powder, salt, and almond extract. Beat until combined, scraping sides of bowl occasionally. Beat in egg. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.
  • Divide dough into several portions. Work desired paste food coloring into each portion, if desired. Cover and chill for 1 hour or until easy to handle.
  • Grease cookie sheets; set aside. On a lightly floured surface roll half of the dough at a time to 3/8-inch thickness. Cut into desired shapes using 2-1/2- to 3-1/2-inch cutters. (Or, if desired, shape flower cookies and leaves from dough.) Place cookies 1 inch apart on the prepared cookie sheets, staggering rows of cookies so that wooden dowels can be inserted into flower shapes. (If desired, stain dowels with green liquid food coloring.) Insert a wooden dowel 1/2 inch into the bottom edge of each cookie. Brush cookies with egg white and sprinkle lightly with sugar.
  • Bake in a 375 degree F oven for 8 to 10 minutes or until edges are firm and bottoms are very light brown. Cool on cookie sheet for 1 minute. Carefully transfer cookies to a wire rack and cool completely. Store in a tightly covered container at room temperature for up to 3 days or in the freezer for up to 3 months. Makes about 24 cookies.
