Fondue Bearnaise Sauce image

Steps:

  • Combine wine, vinegar, onions, herbs & pepper in saucepan; cook over low until liquid has reduced to about half. Strain & cool.
  • Put egg yolks in double boiler; beat until frothy. Beat in vinegar mix. Place pan over hot but not boiling water & do not let water touch top of pan. Add butter slowly about a teaspoon at a time, beating constantly. Add additional pepper & a pinch of salt. Stir in parsley before serving.

Bearnaise Sauce image

Steps:

  • Make the bearnaise reduction first. In a small saucepan, combine the tarragon, shallots, vinegar and wine over medium-high heat. Bring to a simmer and cook until reduced by half. Remove from heat and set aside to cool.
  • Blend yolks and bearnaise reduction together. With the blender running, add 1/3 of the butter in a slow steady stream. Once it emulsifies, turn the blender speed up to high and add the remaining butter. Season with salt and pepper and set aside in a warm spot to hold the sauce.

1/4 cup champagne vinegar
1/4 cup dry white wine

  • In small saucepan over medium-low heat combine lemon juice with onion and tarragon.
  • Simmer 2 minutes.
  • Reduce heat to low and add mayonnaise, milk, mustard, salt and pepper.
  • Whisk until smooth.
  • Cook, stirring occasionally, 3 minutes or just until hot. Do not boil.

Steps:

  • layer onions, beef, onions, drizzle with oil, refrigerate overnight.
  • heat oil to bubbly, keep hot over sterno, dip beef in oil until cooked to your liking.
  • for horseradish sauce, mix all ingredients, refrigerate.
  • for garlic butter, mix all ingredients, refrigerate.
  • for bernaise sauce: combine vinegar, water and pepper in double boiler.
  • add egg yolks, stir constantly.
  • slowly add butter, stirring as it thickens.
  • add lemon juice, tarragon, salt& pepper- if sauce is too thick add a drop of water.

  • Cracked Pepper Sauce: Beat cream cheese& butter together until smooth.
  • Add remaining ingredients and mix.
  • Chill a few hours or overnight to blend flavors.
  • Serve at room temperature.
  • Dill Sauce: Combine all ingredients.
  • Chill several hours or overnight.
  • Teriyaki Sauce: Saute garlic and ginger in oil 30 seconds.
  • Add soy sauce, water,& Sake.
  • Bring to a boil over medium heat.
  • Combine brown sugar and cornstarch.
  • Stir into Sake mixture.
  • Heat& stir until thickened.
  • Serve at room temperature or warm.

  • Set up a double boiler. Put two yolks, vinegar and tarragon into the glass bowl on top and whisk.
  • When water boils, turn it down. Stir CONSTANTLY.
  • When the mixture starts to thicken, add one cube of butter t a time, mixing after each addition until melted.
  • When done, quickly take off the heat and plonk the bottom of the bowl into cold water to stop it from cooking.
  • Make sure that you have a big bowl of cold water on hand so if you think the eggs are going lumpy or about to curdle, put the bottom into the water and whisk vigorously.
