- In a skillet, cook beef over medium heat until no longer pink; drain. Add the green pepper, salt, pepper, oregano and garlic powder. Cook until green pepper is tender. Combine cheddar and Monterey Jack cheeses; set aside. , In a 2-1/2-qt. baking dish, layer half each of meat mixture, chiles and cheese; repeat with remaining meat mixture, chiles and cheese. Meanwhile, in a bowl, combine the egg, cream and flour; pour over cheese layer. , Bake at 350° for 35 minutes. Remove from oven; cover with tomato sauce. Sprinkle with additional cheese if desired. Bake 10-15 minutes longer or until set.

- Grease 1 ½ qt casserole dish.
- Beat eggs, flour, buttermilk, salt and Tabasco and set aside.
- Toss cheeses together and reserve ½ cup for topping.
- In casserole dish, layer the chilies and cheeses several times ending with the chilies on top.
- Pour egg mixture over casserole.
- Bake 35-40 min at 350*.
- Add remaining cheese for topping in the last 5 minutes of baking.
- Garnish with tomatoes and serve.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
- Split the chiles open, and spread half the chiles into the bottom of the prepared baking dish. Layer with the Cheddar cheese, and top with the rest of the canned chiles. Whisk together the eggs, flour, and evaporated milk in a bowl. Pour the mixture over the chiles and cheese.
- Bake in the preheated oven until set, about 30 minutes; remove casserole, and top with the Monterey Jack cheese. Pour the green chili salsa over the top; return to oven, and bake until the cheese is melted, about 15 more minutes.

- Preheat oven to 350 degrees, spray bottom of 9 x 13 baking dish with cooking spray Mix beans with chili powder and spread on bottom of baking dish.
- Lay the chilies and cheese on top of the beans.
- In a mixing bowl, whisk eggs, flour, and milk together well, then spread on top of everything else.
- Bake 30-45 minutes, or until egg is well set and slightly brown.

JULIE'S EASY CHILE RELLENO CASSEROLE
I remember making this easy recipe and loving it as a teenager. From the Family Recipe Box, a newspaper clipping taped to a card, no date but I know I collected it when I was a teenager and made it then (so around 1980).

- Butter a large rectangular baking dish.
- Mix cottage cheese, crackers, eggs, onion, and parsley and put half into dish.
- Top with layers of grated cheese and peppers, then cover with remaining cottage cheese mixture.
- Bake uncovered for 1 hour at 350 degrees.
QUICK CHILE RELLENO CASSEROLE
My mother has been making this recipe for years. Its quick and easy and comes close to the original. I am not a big fan of the "chile". I have substitued chopped green chiles and shredded the jack cheese - which I actually prefer - but either way, this is a tasty one!

Steps:
- Remove seeds and pith from green chiles.
- Cut the jack cheese into large slices and divide evenly between the chiles, folding or tucking the cheese inside.
- Butter (or spray with Pam) a 1 1/2-quart casserole dish and arrange the chiles side by side on the bottom.
- With an electric mixer, beat eggs until thick and foamy.
- Add milk, flour and baking powder and beat until smooth.
- Pour egg mixture over the chiles and sprinkle with the cheddar cheese.
- Bake, uncovered, in a 375F oven for about 30 minutes or until casserole is puffed and appears set when gently shaken.
- Just before casserole is ready, heat marinara sauce to pour over individual servings if so desired.
MARTHA'S CHILE RELLENO CASSEROLE
This is an easy to prepare and delicious appetizer -or- side dish! Wonderful to bring to potlucks or for your Cinco de Mayo celebration. Recipe is from my son-in-law's mom, Martha. Enjoy!

- Preheat oven to 325 degrees F. In a small mixing bowl, beat egg whites with electric mixer until fluffy; add yolks and continue to beat for 3 minutes.
- In an 8 or 9-inch square baking dish, put a layer of green chiles. Put one layer of jack cheese; continue putting one layer of each until you reach the rim of pan. Pour egg over last layer.
- Bake in 325 d F oven for 1 hour.
- Let cool to room temp, then cut and serve.
