FRENCH BREAD ("RAPID RISE")
This recipe makes a rather good French loaf. Since it uses "rapid rise" yeast, it is quicker to make because it only needs 1 rise instead of 2. Prep time includes 40 minute rising time.

Steps:
- Set aside 1 cup of flour.
- In a large bowl, mix remaining flour, sugar, salt and yeast.
- Stir hot water into dry mixture.
- Mix in enough reserved flour to make a soft dough.
- On lightly floured surface, knead dough until smooth and elastic (about 8-10 minutes).
- Cover dough and let it rest for 10 minutes.
- Divide dough in half.
- Roll half of dough into a 10x15 inch rectangle.
- Roll dough tightly (like a jelly roll), starting from the long side, and tapering the ends.
- Pinch ends and seam to seal.
- Place dough seam side down on greased baking sheet which has been sprinkled with cornmeal.
- Repeat with remaining half of dough.
- Cover dough and let rise in a warm draft-free place until doubled in size (about 35-40 minutes).
- With a sharp knife or razor blade, make 4 diagonal cuts on the top of each loaf.
- Combine egg white and 1 Tablespoon water, brush on loaves.
- Bake in preheated 425°F oven for 25-30 minutes or until done.
- Remove from baking sheets and cool on wire racks.
- Note: If you want to make baguettes instead of loaves, you can roll the dough into a rope (by hand) to get the longer thinner shape.

- In a large mixing bowl, add 1/2 cup of the warm water and sprinkle the yeast on top. Let set for about 5 minutes or until yeast has dissolved. Add in the sugar, salt, melted butter and remaining water and stir until blended. Lastly, add in the flour until mixture is relatively smooth. The dough will look very shaggy at first and you may want to knead by hand to bring everything together which should only take about a minute or so. Once the dough is mostly smooth (still okay to have some shaggy bits as you do not want to overwork it), place the dough ball back into the bowl and cover with a dish towel. Let rise in a warm, draft-free place for about 1 hour or until doubled in size.
- Punch down the dough and turn it onto a floured work surface. Using a bench scraper or sharp knife, cut dough in half. Cover and let rest for about 10 minutes.
- Roll each dough portion one at a time into an approximate 10x8 inch rectangle shape. Roll the dough up jelly-roll style (almost like you're making cinnamon rolls) starting with the long side closest to you, pinching the seam to seal. Place the loaves on a parchment lined baking sheet, seam side down. Cover and let proof/rise until almost doubled in size, about 45 minutes.
- Preheat oven to 400 degrees F. With a sharp serrated knife, make three or four diagonal cuts in the top of the loaf. Bake for 20-30 minutes or until lightly browned. Cool on wire racks until warm to the touch or room temperature. Store any leftovers in an airtight container at room temperature. Can also be frozen for up to 1 month; thaw before serving.

- Make your oven a proofer: Turn you oven to 200 degrees. Once it has reached that temperature, turn it off.
- Dough: Combine yeast, sugar and warm water in large mixing bowl and let it stand for about 10 minutes or until bubbly. Add salt, vegetable oil and egg yolk to yeast and mix together using paddle attachment or by hand. Add flour 1 cup at a time {changing to dough hook if using a mixer} until the dough barely sticks to your bowl. Continue to use your dough hook and "knead" for an additional 2-3 minutes or turn dough out onto floured surface and knead by hand for 2-3 minutes.
- Bread: Once your dough is made. Divide the dough in half and shape each half into long loaves. Using a sharp knife, cut diagonal slits into the top of the bread {about 4}, being sure not to cut too deep. Cover dough with a towel and put into the warm oven to rise for 15 minutes.
- Baking: Once bread has risen for 15 minutes, remove it from the warm oven and turn the oven on to 375 degrees. Once preheated, bake bread for 15-18 minutes or until bread is golden brown. Serve warm. Store at room temperature in a Ziploc bag for 3 days or freeze for up to 3 months.

- Add 1 cup of flour to the bowl of a stand mixer fitted with the dough hook. Add yeast and salt and whisk to combine.
- Place water in a heat-proof measuring cup. Heat for about one minute (maybe longer, it depends on your microwave) until water is between 120°-130°F. It’s best to check this with an instant-read thermometer, but if you don’t have one, think hot bath water. Add oil to water, then pour into dry ingredients.
- Run mixer with dough hook, scraping the sides of the bowl, just until the flour is all moistened. Add 2 more cups of flour, mix, then add an another 1 1/2 cups of flour and let the mixer run until the dough is thick and starts to come together, adding an additional 1/2 cup flour as needed. It won’t form a ball but will only be slightly sticky to the touch.
- Turn dough out onto a floured surface and knead until the dough forms a ball and is elastic and springs back when pressed with two fingers; cover and let rest 10 minutes.
