- Whisk the eggs, milk, heavy cream, melted butter, cinnamon and salt in a large bowl.
- Pour 1 cup maple syrup into the bottom of a 9-by-13-inch baking dish. Place the bread slices on top of the maple syrup, shingling them in the pan. Pour the egg mixture on top. Cover tightly with plastic wrap and refrigerate overnight.
- Preheat the oven to 350˚. Uncover the French toast and bake until puffed, golden brown and cooked through, about 1 hour. Let rest for 10 minutes before serving.

- Over medium-high heat, melt butter and stir together brown sugar, cinnamon, and vanilla. Bring to a simmer and add the sliced bananas.
- In a large bowl, whisk 8 eggs, brown sugar, cinnamon, nutmeg, vanilla, heavy cream, and milk.
- Add the cubes of French bread, and gently stir until the bread has soaked up all the liquid.

- Heat a large nonstick skillet over medium-low heat and melt 2 tablespoons of the butter.
- In a large bowl, combine the milk, eggs, 1/4 cup of the brown sugar, the cinnamon, and vanilla. Whisk together until everything's combined and smooth.
- One by one, dunk the slices of bread into the egg mixture and place them on the buttery skillet.
- Fit as many slices in the skillet as you can, cooking them until golden on the first side, about 2 1/2 minutes. Flip to cook them on the other side for about 2 minutes. Remove them to a plate. Add 2 tablespoons of the butter to the skillet and repeat with the rest of the bread slices until they're all cooked.
- To the same skillet, add the remaining 4 tablespoons butter, the remaining 1 cup of brown sugar, and the salt. Stir and cook over medium heat until the butter and sugar are melted and bubbling, 2 to 3 minutes. Turn off the heat completely, pour in the bourbon and stir, allowing the fumes to dissipate for about 1 minute. Keep cooking the sauce, stirring constantly, until the mixture is deep golden, 2 to 3 minutes. Be careful not to cook it too long as it will become chewy, you want a nice caramelly sauce. - Make the brioche: Grease an 8 x 4-inch loaf pan with nonstick spray.
- In the bowl of a stand mixer fitted with the dough hook attachment, combine the warm milk, yeast, sugar, and 1 cup of flour. Mix on low speed until fully combined. Cover the mixture with a clean kitchen towel and let rest for 20 minutes, or until the mixture is frothy.
- In a large spouted measuring cup or medium bowl, whisk together the eggs, vanilla, and melted butter.
- Uncover the flour mixture and return to the stand mixer. With the mixer running on low speed, slowly pour in the egg mixture. Once incorporated, gradually add the remaining 3 cups of flour and the salt, stopping to scrape down the sides of the bowl between additions.
