A shiny, deep colored sauce that is especially good over ice cream, bread pudding, shortcake, pound cake or anything your heart desires. Nothing could be easier, more natural or more delicious! Steps:
- Puree the berries through a food mill or in a food processor and press them through a fine-mesh sieve to remove their seeds.
- Whisk in the sugar and lemon juice, whisking until the sugar dissolves.
- Taste for sweetness and adjust, if necessary.

- Place blackberries in a small saucepan; mash gently with a fork. Stir sugar, schnapps, and lemon juice into mashed blackberries; cook, stirring constantly, over medium heat until blackberries break down and mixture begins to boil, 5 to 10 minutes. Cool slightly before serving.

- In a large saucepan, mix sugar and cornstarch; stir in water. Add blackberries; bring to a boil. Reduce heat; simmer, uncovered, 10-12 minutes or until sauce is thickened, stirring occasionally. Remove from heat; stir in brandy. Cool slightly. If desired, serve with ice cream.

Steps:
- Pick over the berries and reserve 1 cup of the smallest and most attractive.
- Puree the remaining 2 cups berries in a food processor with the brandy, orange juice and honey.
- Transfer the mixture to a sieve set over a medium bowl.
- Press the puree through the sieve and discard the seeds.
- Just before serving, stir in the reserved whole berries.
- NOTE: 1 serving = 2 tablespoons.

- Add blackberries, the 1 tablespoon of water and sugar to a small pan. Heat over low for three to four minutes, gently stirring until the blackberries have given off juices and the sugar is melted and mixture simmers. When blackberries have reached your desired stage (they can be cooked until just soft or cooked longer if you wish them to break apart) add the cornstarch slurry. Mix; the sauce should start to thicken immediately. Remove from heat. The sauce will be thicker once cooled.
- Mix together lemon juice and water. In a small cup, add the cornstarch. Slowly while stirring, add in the lemon juice water mixture. If this mixture sits, the cornstarch will thicken on the bottom of the cup. Just stir together before using.
