GARLICKY GREEN BEANS WITH MUSHROOMS
"We love green beans at our house and enjoy them at least once a week. I'm always experimenting with new ways to fix them," pens Sue Haviland of Lake Mills, Wisconsin. "Garlic cloves and mushrooms lend them delicious flavor in this quick-and-easy dish. I like to steam the beans so they keep most of their nutrients."

Steps:
- Heat oil in a large skillet over medium heat. Add mushrooms, onion, and garlic; cook until onions start to look soft and translucent, 5 to 10 minutes.
- Cut a couple of slits in the green bean bag and microwave on high power until beans are a bit defrosted, 1 to 2 minutes. Remove from the microwave and pour the beans into the skillet.

- Remove the lid and increase temperature to high to cook off any remaining liquid. Serve immediately.

FRENCH GREEN BEANS SAUTéED WITH MUSHROOMS AND ALMONDS
I created this Asian-inspired dish last night. It is permissible for phase one of the South Beach Diet and we LOVED it. I used frozen french beans from Trader Joe's, but fresh beans would be wonderful! Amounts are highly approximated; I didn't measure when making this, but this is pretty similar to what I did. (If using fresh beans, you'd probably want to blanch them in boiling water and then plunge in ice water, and *then* add to the pan.)

Steps:
- Heat oil over medium heat.
- Sauté garlic until soft, being careful not to let it burn.
- Add sliced mushrooms and sauté until they look fairly cooked and shiny (about 5 minutes).
- Add almonds and sauté for a couple more minutes.
- Finally, add frozen green beans and splash of soy sauce.
- Stir frequently until beans are just cooked and, of course, no longer frozen.
- If not on the south beach diet or watching sugar intake, you could add oyster sauce or other Asian condiment to the mixture.
GREEN BEAN-MUSHROOM CASSEROLE (BY PAULA DEEN)
This is a highly rated recipe from Paula Deen of the Food Channel and worth making! I have tweaked it slightly and doubled the complete amounts to suit our tastes --- Paula has a house seasoning blend mix which is 1/2 cup salt mixed with 2 tablespoons black pepper and 2 tablespoons garlic powder, she uses a small amount in this casserole, you have the option of omitting the fresh garlic and adding it in, store the remaining mix in an air tight container for up to 6 months, I strongly recommend using low-sodium cream of mushroom soup

- Drain beans after that and rinse them with cold water to stop the cooking process. Leave beans in the colander to drain.
- Heat a large skillet over medium high heat and add mushrooms and dry saute them until they begin to release their juices. Don’t stir them for 2-3 minutes until they brown, then you can flip them and brown them on the other side for another 2 - 3 minutes. Transfer them to a bowl and set aside.
- Heat butter and olive oil in the skillet. Add chopped onions and saute until tender and translucent, about 3 -4 minutes.
