- Cook pasta according to package directions. Meanwhile, in a large skillet, saute onion in oil until tender. Stir in wine or broth; cook for 1 minute. Drain pasta and add to the skillet. Add the remaining ingredients. Cook and stir over medium heat until heated through and slightly thickened.

PENNE PASTA WITH GRILLED CHICKEN AND ROASTED TOMATOES
I came up with this by adding a couple of different recipes and adding touches of my own ideas. The whole family loved it! Prep time and cooking time is an estimate. So are the servings. This was kind of a throw together meal that worked!

Steps:
- Marinate chicken in favorite marinade and grill until done. You can leave out the chicken for a great vegetarian meal.
- Heat oven to 400 degrees. Mix tomatoes with oil, basil and salt and pepper to taste. Roast for 12 minutes in shallow baking pan.
- Meanwhile, cook pasta according to directions in water or broth add 1/4 cup white wine.
- Smash cooked tomatoes with back of wooden spoon.
- Chop chicken, if using.
- Drain pasta.
- Mix pasta, tomatoes, chicken and olives together. Add white wine and dressing.
- Serve warm.
PENNE WITH TOMATOES AND BASIL
Steps:
- Heat the canola oil in a large high-sided saute pan or saucepan over high heat until it begins to shimmer. Add the onions, garlic and tomatoes with the juice. Mash the tomatoes with a potato masher in the pan and bring to a boil. Reduce the heat to a simmer and cook until the tomatoes begin to soften, about 20 minutes.
- Meanwhile, bring a large pot of water to a boil, add the penne and 2 tablespoons salt and cook until al dente, 8 to 10 minutes. Reserve 1 cup of the pasta water. Drain the pasta.
- Mash the tomatoes again until coarsely chopped. Add 1/4 to 1/2 cup of pasta water to thin out the sauce and continue to cook, stirring occasionally, until thickened, about 20 minutes; season with salt and pepper. Thin with additional pasta water if necessary.
- Transfer the pasta to the sauce; season with salt and pepper. Add some of the Parmigiano-Reggiano to the pan and combine. Cook the pasta in the sauce for 1 to 2 minutes, adding more grated cheese as the pasta cooks. Add some of the basil and parsley and the chile flakes and then drizzle with olive oil. Season with salt and pepper.
- Transfer the pasta to a large shallow serving dish and top with freshly grated cheese. Top with the ricotta and drizzle with 2 tablespoons olive oil. Garnish with the remaining basil and parsley; serve immediately.
PENNE WITH SUN-DRIED TOMATOES AND CHICKEN

- Preheat the oven to 350 degrees.
- Put the sun-dried tomatoes in a bowl, add 1/2-cup boiling water and set the bowl aside for the tomatoes to reconstitute. Fill a large pot with water, and bring it to a boil.
- Combine the chicken and wine in a shallow baking dish. Sprinkle the Italian seasoning on top. Bake for 15 to 20 minutes, until the meat is no longer pink and the juices run clear. Remove and shred the chicken, reserving the cooking juices.
- Drain the sun-dried tomatoes, and slice them thin.
- Pour the reserved cooking juices from the chicken into a saute pan. Add the shallot, mushrooms, peas and tomatoes. Saute over low heat for a few minutes, until the liquid has been absorbed and the vegetables are wilted. Remove the pan from the heat and cover it to keep the vegetables warm.
- Add the penne to the boiling water in the large pot, and cook over high heat to desired doneness, 8 to 12 minutes.
- While the pasta is cooking, make the sauce. Preheat a small heavy saucepan for about 1 minute over medium heat; then spray it twice with the vegetable oil. Toss in the garlic and flour; then, whisk in the evaporated milk. Add the nutmeg and red pepper flakes. Whisking constantly, bring the mixture to a boil, and continue cooking for about 5 minutes, until thickened. Reduce the heat to the lowest setting, and stir in basil.
- Drain the cooked pasta, and transfer to a warm serving bowl. Add the chicken, vegetables and sauce. Season with salt, if desired, and toss. Garnish with olive slices.

FRESH HERB PENNE WITH CHICKEN AND TOMATOES
Found this recipe on the back of a Heartland penne pasta box. Yet to try...looks good. Prep and cooking time is a total of 30 minutes (not counting preparing the pasta) so this goes together quickly and would be great for a weeknight meal.

- Cook and drain pasta according to package directions.
- Heat olive oil in large skillet over medium high heat. Add garlic and cook for one minute. Add tomatoes and basil; cook 2 minutes. Add chicken; simmer for 5 minutes. Toss with pasta and Mozzarella cheese. Season to taste with salt and cracked black pepper. Serve immediately.
- Note: if you do not have fresh basil or garlic, you may substitute 1-1/2 teaspoons dried basil and 1/8 teaspoon garlic powder.

CHICKEN AND HERB BUTTER PENNE WITH FRESH TOMATOES

- For Herb Butter:
- Let butter get close to room temperature and mix all Herb Butter ingredients in small bowl. Wrap and form into a cylinder in parchment paper. Refrigerate. Let the flavors marry for a day or two. Can be made same day but flavors are better the longer it sit in the fridge!
- Cut the chicken breasts into bite size pieces. Season with your favorite seasoning and saute until meat is white and done. I used blackening seasoning and salt and pepper. Drain on paper towel and set aside.
- Cook mini penne until al dente. Drain. Add to entire stick of herb butter and stir. Add olive oil and fresh chopped tomato. Add the parsley paste mixture. Add chicken. Stir and serve while hot. Top with Kraft Parmesan Cheese and fresh parsley for garnish. I like the large slivers of parmesan the best but grated will do. Please use fresh parmesan and not the processed type. Enjoy!

- Bring a large pot of water to a rolling boil over high heat. Cook pasta in boiling water until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain.
- Heat basil and olive oils in a large skillet over medium-high heat. Cook garlic in oil until soft. Add tomatoes, reduce heat to medium, and simmer for 10 minutes. Stir in pepperjack, mozzarella, and Parmesan cheese. When cheese begins to melt, mix in cooked penne pasta. Season with fresh basil.

- Finely chop the onion and garlic. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion and garlic and cook for 2 minutes. Then add the mushrooms, season with salt and pepper, and let cook for 5-6 minutes. Pour into a bowl and set aside.
- Dice the chicken into small 1 inch pieces. Season with salt and pepper. Heat 1 tablespoon of olive oil in the same skillet you used to cook the mushrooms. Heat over medium-high heat, and add the chicken. Cook for 2 minutes, until lightly browned, and then flip and let cook for another 2 minutes. Then add the diced tomatoes, (and grape tomatoes if adding them) and cream. Stir, reduce the heat to low, and let slowly simmer while the pasta is cooking.
- Bring a pot of salted water to a boil. Once the water has come to a boil, add the pasta. Cook for 7-8 minutes, until very al dente. You are going to finish cooking the pasta in the sauce so you want to undercook it. Then drain the pasta and set aside.
- Add the drained pasta to the sauce, along with the mushrooms and spinach (I tear the spinach up as I add it in). Let the pasta simmer in the sauce for 2 minutes over medium heat. Serve with a sprinkle of Parmesan.
