BACON CHEDDAR PATTY CAKES
I always seem to have leftover mashed potatoes in my fridge. This is a great recipe to use them up.

Steps:
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Remove the bacon slices, crumble, and set aside. Leave the bacon drippings in the skillet.
- Mix the mashed potatoes, eggs, onion powder, salt, and black pepper together in a bowl; stir in the crumbled bacon and Cheddar cheese.
- Form the mixture into 8 patties. Heat the bacon drippings over medium heat, and pan-fry the patties in the drippings until crisp on each side, about 4 minutes per side.

- Mix mashed potatoes, egg, flour, and salt together in a bowl.
- Heat a thin layer of vegetable oil in a frying pan. Drop large spoonfuls of the potato mixture into the frying pan. Flatten into a patties as you flip; cook until browned on both sides, 6 to 7 minutes per cake. Repeat with remaining potato mixture.

- Shape mixture into 6 patties.
- Dip each patty into lightly beaten egg then lightly coat with breadcrumbs.

- Tip: If you feel your potatoes are too watery, lightly dust with flour prior to dipping into the egg wash.

- Add cheese, bacon, onion, salt, pepper and parsley; mix well to coat potatoes.

- Measure 1/4 cup potato mixture; press firmly into a ball. Flatten to form a 2 1/2-inch patty; place in pan.
- Cook until golden brown and crisp, about 4 minutes per side.

- Mix potatoes, egg and first 1/2 cup of breadcrumbs together with your hands.
- Mix in chopped pepperoni and mozzerella.
- Grab a handful of mixture, roll into a ball and flatten into a patty shape like a small hamburger. Can also make small balls for appetizers.
- Press into a dish of breadcrumbs and turn over to cover comletely.
- Fry in a large skillet with about 1/4 inch of hot oil, on both sides til brown and crisp.
- Drain on paper towel and enjoy.
