FRIED BROCCOLI

My friends and I used to make this for every barbeque when I was growing up. It is an adaptation of a recipe my girlfriend's dad saw on TV. Although I have no idea what that original recipe was, this one tastes soooooooooo good with barbequed anything! It is broccoli so it tastes like broccoli. If you're expecting something else then this recipe won't please you :)

Fried Broccoli image

Steps:

  • In a frying pan heat olive oil.
  • Put in a pinch of rosemary and saute until the scent gets very pungent.
  • Add broccoli and a couple of dashes of white pepper (2-4).
  • Saute until the broccoli gets very green but looks crunchy/cooked.
  • Lastly, toss in bread crumbs a bit at a time while still sauteing.
  • The crumbs will start to stick into the broccoli.
  • Once all or most of the crumbs are in the broccoli, saute for 1 or 2 minutes longer to brown.
  • Serve right away.

Deep-Fried Broccoli image

Steps:

  • Heat about 2 inches of oil in a large pot to 365 degrees F. Meanwhile, line a baking sheet with paper towels.
  • In a small bowl, stir together the Parmesan, sumac, cayenne and lemon zest.
  • Add the garlic to the oil. Fry until light golden, 30 seconds to 1 minute. Remove to the lined baking sheet to drain. Add half of the broccoli to the oil and fry, turning occasionally, until browned and crispy, about 3 minutes. Remove to the lined baking sheet to drain and season with salt. Repeat with the remaining broccoli.
  • Put the broccoli in a serving bowl and toss with the Parmesan mixture. Sprinkle with the fried garlic. Serve immediately with lemon wedges.

Vegetable oil, for frying
3 tablespoons grated Parmesan
1 teaspoon ground sumac
1/2 teaspoon ground cayenne
Zest of 1 lemon, plus wedges, for serving

Steps:

  • Heat oil in a pan over medium heat until it begins to shimmer.
  • Add the broccoli and sprinkle with salt, stirring to coat in the oil.
  • Cook for 5 minutes, without moving the broccoli.
  • Add chicken stock and place a lid on the pan, and cook for 1 minute.

  • Rinse and pat dry the broccoli.
  • Heat the olive oil in a large skillet over medium heat, add the crushed red pepper and heat 1 minute. Cook and stir the broccoli in the skillet until it begins to get crispy, 5 to 7 minutes. Season with salt to serve.

  • Heat olive oil in a large frying pan or wok.
  • Cook chopped garlic in oil at medium-high heat or until light brown (being careful not to burn).
  • Add broccoli spears to pan. Sprinkle remaining ingredients onto broccoli and toss to combine.
  • Cover and cook for 7-10 minutes or until broccoli heads begin to darken (but not burn), stirring every minute or so. If necessary, lower the heat.

Deep Fried Broccoli image

Steps:

  • Heat oil in deep fryer or large pot on stove to 350° Fahrenheit
  • Beat eggs and milk together in a bowl. Pour milk and egg wash in a ziplock bag.
  • Combine remaining ingredients (except broccoli) in a separate ziplock bag; close the bag and shake thoroughly to mix. (Cajun or Creole seasonings: Zatarain's or Tony Chachere's, to taste or 1 teaspoon).
  • Shake and soak broccoli pieces in egg wash bag for 5 minutes, then place them in flour and seasoning ziplock bag. Shake to coat. Place each coated broccoli piece in hot oil and cook until golden brown. Drain on paper towel.
  • Best served hot out of the fryer. Serve with condiments of your choice, catsup, hot sauce, or cocktail sauce are my favorite choices.

Khao Phat Kai (Thai Fried Rice With Chicken) image

Steps:

  • In a bowl, stir together the fish sauce, chiles, and garlic. The sauce can be used immediately, but I think it tastes best if the chiles are allowed to soften and mellow for 2 to 3 hours. Store the condiment in a tightly capped glass jar in the refrigerator for up to a month, though the chiles will have lost their heat by 2 weeks.
  • Cut the chicken against the grain and on the diagonal into thin, bite-size slices. Set aside.
  • Trim about 1 inch off the bottom of each stalk end of Chinese broccoli. Cut each stalk on the diagonal into slices about 1⁄2 inch thick and 2 inches long. Cut the green leafy parts crosswise into 2-inch pieces. Keep the stalks and leafy parts separate.
  • Heat the oil in a wok or a 14-inch skillet over high heat. When the oil is hot, add the garlic and fry for about 30 seconds, until fragrant. Add the onion wedges and let them brown on the underside, undisturbed, for 1 minute. Flip them and let brown on the second side for 1 minute. Add the chicken, tomatoes, and the stalk pieces of the Chinese broccoli and stir-fry for 3 to 4 minutes, until the chicken is cooked through.
  • Add the rice, sweet soy sauce, thin soy sauce, and fish sauce and stir-fry to distribute the sauces evenly and heat the rice. Make a well in the center of the rice mixture all the way to the bottom of the wok and crack the eggs into the well. Lightly scramble the eggs with the tip of the spatula, then let them cook undisturbed for about 1 minute, until they brown on one side. Add the leafy parts of the Chinese broccoli and stir-fry everything together until they are evenly distributed and the Chinese broccoli has wilted, about 1 minute. Remove the pan from the heat.
  • Transfer the rice to a serving platter or individual serving plates. Dust with the pepper and serve with the lime wedges, chile fish sauce, and cucumber.
