MEXICAN FRIED ICE CREAM

"Fried ice cream is one of my favorite desserts to order from Mexican restaurants," says Mandy Wright of Springville, Utah. "When my sister and I found this recipe for preparing it at home, we knew it would be an impressive way to end a meal."

Mexican Fried Ice Cream image

Steps:

  • Place nine 3-in. scoops of ice cream on a baking sheet. Freeze for 1 hour or until firm. , In a shallow bowl, combine cornflake crumbs and cinnamon. Roll ice cream balls in crumb mixture. Place on baking sheet; freeze overnight. Wrap each scoop separately in plastic wrap; transfer to a freezer bag. May be frozen for up to 2 months., In an electric skillet or deep-fat fryer, heat oil to 375°. Unwrap ice cream; fry one scoop at a time for 8-10 seconds. Place in chilled bowls; serve immediately. Top with honey and whipped topping if desired.

Fried Ice Cream dessert for a party! This is a very easy dessert to make and it tastes JUST like fried ice cream from your favorite Mexican restaurant! Coconut is optional in my opinion and it still tastes amazing!

Steps:

  • Heat oven to 375 degrees F.
  • In a 10 inch skillet, melt butter over medium heat. Add almonds; cook and stir 3 minutes.
  • Stir in crushed cereal, coconut and brown sugar. Mix well.
  • Press mixture into the bottom of an ungreased 9x13 inch pan or baking dish. Bake 8 minutes. Let cool and place in freezer for 30 minutes.
  • While pan is cooling, remove ice cream from freezer and allow to soften in a large bowl.
  • Sprinkle cinnamon over softened ice cream and mix well. Spread over cooled crust, cover and freeze for about 4 hours.
  • Cut into 5 rows by 3 rows and serve with honey, caramel and/or chocolate sauce drizzled over top!

Steps:

  • Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
  • In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
  • In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
  • Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

Steps:

  • With an ice cream scoop, form 4 large balls of ice cream. Place on a waxed paper lined sheet and cover with plastic wrap. Freeze for at least 2 hours.
  • In a bowl, combine the cornflake crumbs with either the coconut, walnuts or cookie crumbs (or any combination). Spread the mixture in a shallow dish.
  • Dip the ice cream balls in the crumb mixture and freeze for 30 minutes.
  • In a bowl, beat the eggs and sugar. Dip the coated ice cream balls into the eggs, then roll in the crumb mixture, coating completely. Freeze for 1 hour. (If necessary, or for a thicker crust, roll again in eggs and crumbs until the balls are completely coated.)
  • Heat the oil in a large pot or fryer to 400 degrees F. One at a time, lower the balls into the oil and fry until golden brown, about 30 seconds to 1 minute. Remove from the oil and place in a dessert bowl. Drizzle with chocolate sauce and whipped cream, as desired. Repeat with the remaining ice cream.
