HOME-FRIED CHEESE STICKS
These is an easy, cost-efficient way to make home-made fried cheese sticks. Taste just wonderful, light crispiness. More for your dollar and easily stored in the freezer for when you have a craving. I make 2 batches, one for the 'now' and one for later. Serve with your favorite dipping sauce.

- Remove string cheese sticks from plastic wrappings and cut the strings in half crosswise.
- Line a baking sheet with parchment paper. Place eggs in a bowl and bread crumbs into a large shallow bowl.
- Dip cheese stick halves into egg and roll in bread crumbs to completely coat the sticks; place breaded cheese sticks onto the prepared baking sheet. Allow cheese sticks to stand at room temperature for about 5 minutes to set, and repeat dipping in egg and bread crumbs to form a thick coating. Freeze breaded cheese sticks for at least 2 hours.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Deep fry cheese sticks, a few at a time, until the coating is golden brown and crisp and the cheese is soft, 5 to 8 minutes. Let sticks drain on paper towels; cool slightly and serve warm.

- Heat 2 inches of oil in a wide heavy-bottomed pot to 350 degrees F.
- Meanwhile, combine the pancake mix, cornmeal and egg in a large bowl. Add 3 cups of water and stir until a thick batter forms. The batter should be thick but pourable; thin with a little more water if needed. Pour the batter into a glass tall enough to completely immerse the length of the cheese.
- Skewer each piece of cheese on a bamboo or wooden chopstick.
- To fry: In batches of three, dip the skewered cheese into the batter, ensuring each piece is covered completely. Slowly lower the cheese into the hot oil. Very quickly, flip the cheese over so all parts of the batter have a chance to set and begin cooking. Cook, flipping frequently, until golden and crisp, 1 to 2 minutes. Remove to a paper towel-lined plate and repeat with the remaining ingredients.
- Serve warm with warm marinara sauce on the side.

- In a small bowl, beat the egg with 1-tablespoon of the bread crumbs.
- Dip the cheese cubes into the egg mixture and then roll in the bread crumbs to coat well.
- In a large skillet, melt just enough oil to make a 3-inch depth.
- Heat to 380-degrees.
- Fry the cheese cubes, a few at a time, for 1 minute or until crisp and golden.
- Lift out with a slotted spoon and drain on a paper towel.
- Keep warm until ready to serve.
- Serve with toothpicks.

- Wash the Swiss chard and cut into 1 inch strips. Separate the thick and tough stalk sections from the upper leafy strips.
- Bring the water and 1 tablespoon of salt to a boil in a large saucepan.
- Cook the stalk sections in the salted boiling water for 2 minutes. Stir in the leafy strips and cook until the leaves are wilted and the stalks are fork tender, about 6 minutes. Drain and set aside.

- In a wok heat the oil (medium heat).
- Add shallots; stir fry 1 minute or until just beginning to brown.
- Add Swiss Chard, toss and cover.
- Cook 2 minutes.
- Remove cover and cook about another minute.
- If there is any liqiud drain it off.
- Stir in the Feta cheese, cook 30 seconds or until it starts to melt.
- Add Pine nuts and season.
