- Cut each piece of bread into thirds; place in an ungreased 13x9-in. dish. In a large bowl, whisk the eggs, milk, sugar, vanilla and cinnamon. Pour over bread; soak for 2 minutes, turning once. If desired, coat bread with cornflake crumbs on all sides. , Place in a greased 15x10x1-in. baking pan. Freeze until firm, about 45 minutes. Transfer to an airtight freezer container and store in the freezer., To use frozen French toast sticks: Place desired number on a greased baking sheet. Bake at 425° for 8 minutes. Turn; bake 10-12 minutes longer or until golden brown. Sprinkle with confectioners' sugar if desired. Serve with syrup.

- In a shallow dish, beat together the eggs, sugar, milk, maple syrup, brown sugar, cinnamon, and nutmeg with a fork until well blended.
- Dip each bread strip into the egg mixture, coating completely.
- In a large skillet, melt 1 tablespoon butter over medium heat.
- Cook the bread strips a few at a time for 2 to 3 minutes per side, or until golden, adding more butter as needed.
- Serve immediately or cool completely, flash freeze on cookie sheet, then store in a labeled freezer bag.
- To serve: reheat in the oven, toaster oven, or microwave until heated through.

FREEZER FRENCH TOAST
I don't care for prepackaged frozen French toast, but I rarely have time in the mornings to prepare it from scratch. Then my friend gave me this wonderful recipe. I keep a freezer full of these slices and simply pop them into the oven for a homemade breakfast in no time.

- In a large bowl, beat eggs, milk, sugar, vanilla and nutmeg. Place bread in a well-greased 13-in. x 9-in. baking dish. Pour egg mixture over bread. Let soak for several minutes, turning once to coat. Freeze until firm. Package in airtight containers. , To bake, place bread on a well-greased baking sheet. Dot with butter. Bake at 450° for 7 minutes; turn and bake 10-12 minutes longer or until golden brown.

FRENCH TOAST STICKS - OAMC
I got this basic recipe from another site but changed it a little for my family. The original recipe called for orange juice as the liquid instead of milk. I also added the vanilla as we think it gives it a nice flavor.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Cut each slice of bread into 3 pieces to make sticks. Texas Toast is a very thick sliced bread about 3/4" thick. You could substitute french bread if Texas toast is not available.
- In a bowl, mix together melted butter, eggs, sugar, cinnamon, vanilla and milk. Beat well.
- Dip sticks into egg mixture and place on a cookie sheet that has been sprayed with cooking spray.
- If there is any dip left, you can drizzle it over the sticks.
- Bake for 25 minutes on middle rack of oven. Turn halfway through baking time.
- Allow to cool.
- Flash freeze on cookie sheet, remove and place in a ziploc bag.
- To reheat: place 3 sticks on a microwave-safe plate and heat on high for 1 minute until warm. Serve with syrup.

- Dip each slice of bread in mixture so it absorbs as much as possible.
- Brown on both sides in margarine over moderate heat.
- Cool.
- Freeze in single layer on greased cookie sheet overnite.
- Stack and wrap in foil and return to freezer until ready to use.
- To heat place slice in toaster until hot.

BLUEBERRY FRENCH TOAST (OAMC)
This recipe is originally from Fix, Freeze Feast although it may have been altered slightly. I usually make 6 at a time and freeze for my OAMC club. Perfect for brunch with maple syrup. I usually serve with a quiche for a complete meal. I sometimes use less cream cheese depending on who's going to be eating it. You can substitute 1 cup fresh blueberries for the pie filling but recipe won't be as moist. Recipe may be doubled and prepared in a 9x12 pan if desired.

Steps:
- Spray an 8x8 deep pan with non stick spray.
- Place half the bread cubes in the bottom of pan.
- Dot bread with cubes of cream cheese.
- Spread pie filling over bread and cream cheese.
- Top with remaining bread cubes.
- Mix remaining ingredients and pour over top.
- Let sit overnight in refrigerator or cover and freeze for OAMC.
- Bake covered at 350 for 30 minutes, uncover and bake 30 minutes more.
