Steps:

  • Mix ingredients for crust and press into a cookie sheet Bake 375° for 20 minutes or till golden brown (set aside).
  • For layer 1 Mix powdered sugar and cream cheese till smooth and fold in dream whip (set aside).
  • For layer 2 Mix prepared danish dessert w/ frozen raspberries while it is still warm.
  • Break up crust and press 1/2 of it into 9 by 13 pan.
  • Spread cream cheese mixture carefully over crust and then spread raspberries over that.
  • Sprinkle w/ remaining crust and refrigerate till served.

2 cups flour
1 cup margarine
1/2 cup brown sugar
1 cup chopped nuts
1 cup powdered sugar
8 ounces cream cheese
2 (1 1/3 ounce) envelopes Dream Whip (prepared)
1 (4 3/4 ounce) package junket danish dessert mix (raspberry flavored, prepared minus 1/2 c water)
1 (12 ounce) package frozen raspberries

DURIAN COCONUT DELITE

This recipe comes courtesy of Patrick Simon another Raw Food Enthusiast. He states that you should use a Vita-Mix blender for this. He says he ate something similar when he was in Thailand. I made this recipe this morning and its setting up in the fridge. I changed a few things in the recipe. I added a tbsp. vanilla extract, 1 tbsp. mesquite flour and 1 tbsp. raw cacao to the oat groats. I processed the oat groats mixture in my food processor. I used a young coconut instead of an old one and I used 18 dates instead of 4. I also put 1 tbsp. maple extract into the date/coconut mixture. The reason why I used so many dates is because the meat of the young coconut isn't anywhere near as dense as the old coconut.

Durian Coconut Delite image

Steps:

  • Sprout the oat groats for a day. I do this by getting a large mason jar that will hold at least 6 cups and put the oat groats in the jar with filtered water.
  • Rinse, then fill the jar with the groats more water to cover and set the jar on its side at a 45 degree angle I let this sit over night.
  • In the morning rinse the oat groats again.
  • Spread the groats in the bottom of a small casserole dish.
  • Put the Durian pods in the Vita Mix and blend until smooth. Spread over the oat groats.
  • Remove the milk and flesh from the coconut.
  • Process the coconut milk and meat and spread that over the top of the oat groats. The flesh of the coconut is very dense so a powerful blender is a must here. Add the dates and maple syrup.
  • Blend just until mixed and spread over the durian.
  • Bon Appetit!

  • Preheat oven to 350°. In a small bowl, combine flour, cashews, coconut and brown sugar. Stir in butter. Sprinkle into a greased 15x10x1-in. baking pan. Bake 20-25 minutes or until golden brown, stirring once. Cool on a wire rack., Meanwhile, in a large bowl, combine cream, milk, lime juice, zest and vanilla. Refrigerate until chilled., Fill cylinder of an ice cream maker two-thirds full; freeze according to the manufacturer's directions., Sprinkle half of the cashew mixture into an ungreased 11x7-in. dish. Spread ice cream over top; sprinkle with remaining cashew mixture. Cover and freeze 4 hours or until firm. Garnish servings with whipped cream and lime slices if desired.

  • Place the yogurt in a fine meshed strainer lined with cheesecloth and allow to drain for about two hours.
  • place half the pistachios and the sugar in a food processor or coffee grinder and grind to a powder.
  • Roughly chop the remaining nuts.
  • Combine the drained yogurt, nuts, dates and ouzo and mix well.
  • Place in freezer.
  • After one hour, remove from freezer and mix well.
  • Return to freezer and freeze till firm.
  • Divide into four portions and garnish with bittersweet chocolate shavings.
