Steps:

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, baking powder, and salt. Make a well in the center and pour in the milk, buttermilk, melted butter, vanilla, and egg yolks. Whisk until the batter just comes together (there will be some lumps).
  • Add the egg whites to a medium bowl and beat with an electric hand mixer until foamy. With the mixer running, gradually add the sugar and continue beating until stiff peaks form. Gently fold the egg whites into the batter until just combined.
  • Spray the heated waffle iron with nonstick cooking spray. Ladle the batter into the waffle iron, close the lid, and cook according to manufacturer's instructions until the waffle is golden brown and crisp, 5-6 minutes. Transfer the waffle to a plate and repeat with the remaining batter.
  • Serve the waffles hot, with butter and maple syrup alongside.

Steps:

  • Preheat the waffle iron according to the manufacturer's instructions.
  • In a large bowl, whisk together the flour, cocoa powder, ½ cup sugar, the baking powder, baking soda, espresso powder, and salt.
  • In a medium bowl, whisk together the Planet Oat Oatmilk and the vinegar. Let sit for 5 minutes, then mix in vegetable oil and egg yolks.
  • Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
  • In a medium bowl, whisk the egg whites with the remaining 2 tablespoons of sugar until frothy and doubled in volume, about 5 minutes.
  • Fold the egg whites into the waffle batter until just combined.
  • Grease the waffle iron with nonstick spray. Cook the waffles according to the waffle iron instructions. Transfer the waffles to a wire rack, arranging in a single layer, and let cool to room temperature.
  • Line a baking sheet with parchment paper. Transfer the waffles to the prepared baking sheet and freeze for 15-30 minutes, until cold.

  • Place one waffle on a greased double thickness of heavy-duty foil (about 12 in. square). Sprinkle with 1/4 cup each marshmallows and chocolate chips; top with another waffle. Steps:

  • Place a sausage patty and a mug or ramekin on a large microwaveable-friendly plate.
  • Crack the egg into the mug. Season with salt and pepper. Add a splash of milk, if desired. Whisk until well-mixed.
  • Microwave the entire plate for 1½-2 minutes, or until the egg is cooked through.
  • Invert the mug with the egg. You may have to run a knife around the mug first to ensure that the egg comes loose in one solid piece.
  • Toast two frozen waffles.
  • After the waffles are toasted, layer 1 waffle, cheese, the cooked sausage patty, eggs, and the remaining waffle.
  • Fold the edges of a sheet of aluminum foil down by half an inch (1 cm). Place the sandwich in the middle.
  • Bring the top and bottom of the edges of the paper together over the center of the sandwich. Repeat folding in half-inch (1 cm) turns, creasing each time, until the fold is level with the top of the sandwich.
  • Starting on the left side, use your fingers to press the edges into the center to form a pleated triangle. Press down and crease the triangle's edges, including at the base of the sandwich, before carefully folding it underneath. Repeat this process on the other side of the sandwich.
