FRUIT LOAF
A spicy raisin bread made in a bread machine. The most common substitute for mixed spice in the U.S.A. is pumpkin pie spice.

Steps:
- Add water, oil, brown sugar, bread flour, gluten flour, milk powder, mixed spice, and yeast into the bread machine pan in the order suggested by the manufacturer. Select Fruit setting or the setting for Basic White Bread. Press Start.
- If your machine has a Fruit setting, add the golden raisins and peel at the signal, or around 5 minutes before the kneading cycle has finished.

EASY FRUIT LOAF
An easy to make fruit loaf using sultanas or a mixture of dried fruits. Serve buttered with tea or coffee for a change from cookies.

Steps:
- Heat gently together in a pot on stove top the water, sugar, dried fruit and butter until butter melts and sugar dissolves.
- Allow to cool for a few minutes then stir in flour and spices and baking soda.
- Pour into a large loaf pan which has been greased and floured or bottom lined with baking paper and bake at 350'F for 45 minutes or until a cake tester comes out clean.
- Remove from oven and leave to cool in tin for 10 minutes then tip out onto a wire rack to finish cooling.
- Serve cut in slices and buttered.

FRESH FRUIT BREAD
A wonderful bread adaptable to any season of the year. It freezes well. One of my most requested recipes.

- Cream butter and sugar, add eggs, sour cream, and vanilla. In another bowl, mix flour, baking powder, baking soda, salt, cinnamon, and add to above mixture.
- Carefully fold in fruit.
- Pour into two prepared bread pans and bake at 350° for one hour.
- This recipe may be doubled.
- Variation: Prune Bread: Use 3/4 pound chopped pitted prunes and add 3/4 teaspoon cardamom, 1/2 teaspoon nutmeg, 1 Tablespoon grated orange peel.
- Cranberry Bread: Use 2 cups whole cranberries, eliminate cinnamon, add 1 Tablespoon grated orange peel, 1 teaspoon orange extract.
FRUIT SALAD
A fruit salad is an act of kindness to your future self: Taking the time to chop your favorite fruits, especially the more labor-intensive ones, then eating them in a large bowl by the spoonful is inordinately satisfying. This version calls for golden nuggets of pineapple, mango and bananas, a smoothie in fruit salad form, but you could use whatever you have on hand. Blueberries, strawberries and peaches would be lovely, as would sliced kiwi, pomegranate arils and clementine wedges. A spritz of lemon juice and a pinch of salt - just a pinch - make all the difference in enlivening fresh-cut fruit.

- In a large bowl, toss to combine the pineapple, mangos, bananas and salt. Depending on how acidic your fruit is, season with as much lemon juice as you would like, starting with 1 tablespoon.
- Serve immediately or pack in an airtight container and store in the refrigerator for up to 2 days.

- Line a loaf pan with waxed paper. Drain pineapple, reserving juice. Put lemon juice in a 1 cup glass measuring cup, add enough pineapple juice to make 1/2 cup.
- Put juice into a small saucepan. Sprinkle gelatin over the juice. Let sit 5 minutes to soften. Put on medium heat and stir constantly until gelatin is dissolved.
- In a medium bowl, place mayonnaise and cream cheese. Beat with a wooden spoon until smooth. Add pineapple, oranges, bananas, marshmallows, cherries, pecans and gelatin mixture. Mix well. Put in frig. until it is partially gelled about 1 hour. Stir frequently.
- Put heavy cream in a small chilled bowl. Beat until it peaks. Gently fold whipped cream into thickened fruit mixture.
- Spoon mixture into loaf pan. Pack well making sure there are no air holes. Cover with plastic wrap. Freeze until firm about 4 hours.
- When ready to serve, turn out onto a cutting board. Slice and plate. Let stand about 10 minutes before. You can substitute any fruit you wish.
