SPICED FRUIT LOAF
A treat when freshly baked and spread with butter, then try it toasted for breakfast the next day

- Soak the dried fruits in the orange juice for about 30 mins, then sieve, reserving the juice.
- Put the flour, yeast, caster sugar and 1 tsp salt into a large mixing bowl with the spices and soaked fruit and mix well. Make a well in the centre and pour in the warm milk, reserved orange juice, the beaten egg and the melted butter. Mix everything together to form a dough - start with a wooden spoon and finish with your hands. If the dough is too dry, add a little more warm water; if it's too wet, add more flour.
- Knead in the bowl or on a floured surface until the dough becomes smooth and springy. Transfer to a clean, lightly greased bowl and cover loosely with a clean, damp tea towel. Leave in a warm place to rise until roughly doubled in size - this will take about 1 hr depending on how warm the room is.
- Knock the dough back by kneading for a few secs. Dust 2 x 2lb loaf tins with flour. Halve the dough. Use a little flour to help you shape each half into a smooth oval, then pop them into the tins. Cover both loosely with a clean, damp tea towel and leave to prove in a warm place for about 20 mins. Meanwhile, heat oven to 180C/160C fan/gas 4.
- Bake for 20 mins, then cool in the tins before turning out and slicing.

FRUITED SHERRY BREAD
This is a wonderfully aromatic bread with lots of dried fruit. It's rich in fruit, not rich in fat! You can also use prunes, dates, pears or any type of dried fruit in this bread.

- Place the dried fruit into a small saucepan with the crystallized ginger, sherry, and orange rind. Bring mixture to a boil, remove pan from heat, cover and let cool for 30 minutes. Place walnuts on a baking sheet and toast until golden, about 10 minutes; set aside to cool. Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a 9x5 inch loaf pan.
- In a large bowl, cream the butter and sugar. Beat in the egg and then the milk. Combine the flour, baking powder, allspice and salt, stir slowly into the egg mixture. Do not over mix. Fold in the walnuts and cooled fruit mixture. Pour the batter into the prepared loaf pan.
- Bake in preheated oven for 60 to 70 minutes, until a toothpick inserted into center of the loaf comes out clean. Let the loaf cool in the pan 15 minutes before removing it to a wire rack to cool. When the bread has cooled completely, wrap it in plastic. It tastes better if left to sit for a day, and it's especially good with butter or cream cheese.

DRIED FRUIT STUFFING

- Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Place bread cubes in very large bowl. Melt butter in heavy large skillet over medium-high heat. Add onions and celery to skillet; sauté until vegetables are tender and golden, about 10 minutes. Add Sherry, figs, cherries, apricots, sage, thyme and rosemary; cook until fruit is tender and liquid is reduced to 1/3 cup, about 7 minutes. Add to bread cubes; stir to blend. (Stuffing can be prepared 1 day ahead. Cover and refrigerate.) Add stock to stuffing; season with salt and pepper. Mix in beaten eggs.
- Transfer stuffing to prepared baking dish. Cover and bake 30 minutes. Uncover and bake until top begins to crisp, about 25 minutes longer.
